Some have such a thin skin,you're not losing much off the MUSHROOM ???????
its quicker to top and tail them, then pour boiling water on then and leave for 15 mins, the skins just roll off without effort.
Shallots are very spendy in the US.
Use small yellow onions. Actually, you don't have to salt them either, except for a bit of salt for flavor.

I don't get it. You worry about sterilizing the jar, then you fill it full of vinegar. Nothing will grow in there, man.
