yeah the base is very similar, the difference would be the eel bones and eel stock in a full eel sauce, and a real teriyaki could have strong chicken stock and some garlic in it.

Well its more about control you can choose the amount of sriracha in your spicy mayo and using quality ingredients, like the good kewpie and good sriracha from Huy Fong Foods. Then you can also add more ingredients like lime juice or toasted sesame seeds...ect. Yes eel sauce is indeed delicious 🤤
One sriracha bottle you can use about 6 times(depending on the size of course) for one batch of mayo. Idk the mayo price where do you live, but I get them for around 2-3/bottle. And sriracha last for ages, really, I think it survives a nuclear holocaust:)
How do you know it's the Japanese Kewpie mayo? Also, I'm sure you could keep the bottle in the fridge for a lot longer than a week. Mayo is something you can keep in the fridge for months after opening, so is Sriracha...

One thing I don't understand is the ubiquitous wooden bowl for cooling off the sushi. If the goal is to cool the rice rapidly, why not use a metal bowl. I understand that vinegar is acidic, so I just don't leave it in the metal bowl, and rinse it off immediately. Or does it even matter? I got the same great results. Or is the wooden bowl just for presentation and just looks cool? What am I missing here?
I do love some Vietnamese fish sauce, have you tried the brand Red Boat, thats the one I use and love. Anyway, yes I do think it could work well as a substitute for eel stock in eel sauce.

I made a bloody mess the video of learning from was silent it looked easy but in live it was so difficult the flights were separating do you have any videos or how would you filet such fish? I can cut salmon and tuna but this one particular fish is so different never got to taste it I got pissed and threw it away!😭
I used about 2/3 pickled sushi ginger juice & 1/3 rice vinegar for the mango sauce. Ginger hits you first followed by the sweet mango👌Thank you!

It's pronounced 'QP' mayo. He's just saying it weird. His accent is different. He softens his 'r' sounds too. He weighed it in "gwams".

That “eel sauce” is like a basic teriyaki glaze. Equal part sugar, Mirin, soy sauce
