    I used about 2/3 pickled sushi ginger juice & 1/3 rice vinegar for the mango sauce. Ginger hits you first followed by the sweet mango👌Thank you!

      @@MakeSushi1 Yes, we made the spicy mayo and even went to an Asian market here in OKC to get the correct mayo. It is amazing. He's been practicing. We haven't tried the eel sauce but I'm going to get the ingredients so he can. The stuff we've bought he calls "seal sauce" just because he thinks it's hilarious that someone might believe him that it's made from seals.

    I love these recipes, thank you. What's also interesting is how you pronounce the mayo. In Australia, we call it like the letters 'Q-P', the same as the doll. Looking forward to more videos.

      It's pronounced 'QP' mayo. He's just saying it weird. His accent is different. He softens his 'r' sounds too. He weighed it in "gwams".

      I don't think there is a limit to what you could put this on, mainly sushi rolls/sushi battles ships, plate decoration...ect
      just try these on things and see how it tastes.

    I like the mayo recipe..though I'm more likely to use it for a dipping sauce for karaage which means I don't need such a large amount..same ingredients but a smaller size will do me fine since I would never go through that much spicy mayo in a week.

    That “eel sauce” is like a basic teriyaki glaze. Equal part sugar, Mirin, soy sauce

      yeah the base is very similar, the difference would be the eel bones and eel stock in a full eel sauce, and a real teriyaki could have strong chicken stock and some garlic in it.

    Do you know what the white sauce is that can come on top of sushi rolls sometimes?? Some people say that it's just Japanese mayo but the one I had wasn't it was a nearly pure white sauce that was sweet.

    whats cheaper though, making them or buying them? for example, i bought a bottle of japanese spicy mayo or $4 while about the same size sriracha bottle is like $5. on another note, eel sauce is sooooo good.

      Well its more about control you can choose the amount of sriracha in your spicy mayo and using quality ingredients, like the good kewpie and good sriracha from Huy Fong Foods. Then you can also add more ingredients like lime juice or toasted sesame seeds...ect.
      Yes eel sauce is indeed delicious 🤤

      One sriracha bottle you can use about 6 times(depending on the size of course) for one batch of mayo. Idk the mayo price where do you live, but I get them for around 2-3/bottle.
      And sriracha last for ages, really, I think it survives a nuclear holocaust:)

    How do you know it's the Japanese Kewpie mayo? Also, I'm sure you could keep the bottle in the fridge for a lot longer than a week. Mayo is something you can keep in the fridge for months after opening, so is Sriracha...

    One thing I don't understand is the ubiquitous wooden bowl for cooling off the sushi. If the goal is to cool the rice rapidly, why not use a metal bowl. I understand that vinegar is acidic, so I just don't leave it in the metal bowl, and rinse it off immediately. Or does it even matter? I got the same great results. Or is the wooden bowl just for presentation and just looks cool? What am I missing here?

    When making the Eel Sauce, would a splash of a good Vietnamese fish sauce be an acceptable substitute for the eel stock?

      I do love some Vietnamese fish sauce, have you tried the brand Red Boat, thats the one I use and love.
      Anyway, yes I do think it could work well as a substitute for eel stock in eel sauce.

I can cut salmon and tuna but this one particular fish is so different never got to taste it I got pissed and threw it away!😭
