Roasted full chicken with wedges

  • I was so exhausted and needed to prepare a meal that won’t require me to be on my feet for long and came up with this delicious roasted chicken with wedges, the only mistake I made was not taking out the chicken out when it was done because potatoes were still not done, next time I’ll cut them thinly so that they cook quicker and that resulted in the chicken being slightly burnt on the marinade but that didn’t affect the taste and I’ll recommend this recipe as a lazy Sunday meal served with green salad 😋
    Ingredients:
    Full chicken cut open
    Potatoes cut to your preference
    For Chicken marinate:
    Roasted red pepper pesto
    1 tbsp olive oil
    1tbsp any spread or butter
    2 tbsp fresh lemon juice
    Salt and pepper
    1 tsp ground coriander
    1 tsp paprika
    4 cloves crushed garlic
    Chopped fresh dill, parsley and thyme
    Instructions~ mix everything together to make marinate, marinate your full chicken and cover, let it marinate for 1 hour or more in the fridge. Prepare your potatoes, season with salt and drizzle some olive oil add you chicken the skin facing down roast in the oven on 190 for 30 minutes, turn the chicken around and brush left marinate and cook until chicken is cooked and potatoes are soft, service with green salad
