    Omg this is literally my go to pot pie recipe! I just use a store bought pie crust and instead of water for sautéing the veggies i just vegan chicken stock for a cozier more realistic flavor 😋

    I MADE THIS LAST NIGHT and WOW! So delish and easier than I thought. My non-veg husband ate two pieces! I didn't have chickpea flour, so I subbed in 2 tbsp of arrowroot instead and it still thickened up beautifully! Also added a little rosemary to the crust :) Thanks, girl! xoxo

    Chicken pot pie was my absolute FAVORITE meal growing up. I tried this recipe the day you posted it on your blog and I LOVED it! Seriously fulfilled all my childhood memories of how good pot pie is. 10/10 would recommend (although I was lazy and used a vegan pie crust from the store)

    Growing up I always loved when my mom would make a pot pie for dinner. As a vegan I've missed eating them because they usually have chicken or turkey, but I think this will be an awesome recipe to try out. It has also been pretty rainy here in CA so it is the perfect weather for a warm pot pie.

      I know Jaimie Oliver gets a lot of flack because he's been regarded as a healthy food warrior but until now, despite his going back to school and learning about the blue zones, vegetarian is as close as he will ever get. I just like how completely low tech he always has been -- a vinegar bottle would make perfect sense and god forbid something turned out like it was engineered by Martha Stewart or Delia Smith … ouch! So long live vinegar bottles!

    This is my go to! This is my fourth time making this and I always come back to this video. It’s a family favourite even though the rest of my family doesn’t eat plant based like I do they still love it!

    Caitlin, I made this pot pie today. SO GOOD! I’m not a big fan of chickpeas but that sauce is amazing!!!! The pie crust was easy, too, though I need to practice my rolling skills.😳 I seriously can’t stop talking about it! Happy to be eating so tasty that’s GF and vegan!

    I just made this 💜 In my opinion it doesn't need the crust, just cook veggies a little longer and serve on a bed of rice. The sauce and veggies were amazing, thank you for this wonderful recipe 😋🙏

    Hi Caitlin I did indeed follow this recipe and it was awesome! I can think of switching up filling ingredients to eat the rainbow; thinking leek sage chickpeas definitely, same mirepoix you did except leek would substitute for onion; rutabaga instead of potato; mushrooms, asparagus or broccoli whichever is in season. I really envy you growing up in a vegetarian household; it ultimately makes things easier. My family was European; Dad, Serbia, Mum Berliner Jewish person who escaped the holocaust, so we never saw Wonderbread etc. ever but we were not meatless. Dad's pasoulj, Serbian bean soup is a mass of veggies and fiery but requires a lamb shank to be authentic; my version is fiery and delicious and one adapts. Vegan yoghurt, parmesan, even vegan feta cheese, which people think is the real thing, whatever that means, that stuff is easy. And a lot of food in the Balkans is Greek or Middle Eastern so there was always tabbouleh, dolmos; if you don't have a problem with wheat, spanakopita, which in Serbian is unpronounceable and you can use kale instead of spinach if so inclined and vegan feta and it's frankly better than original. But I rabbit on. So glad to find your web site, really like the happy pear because of their great connection with each other and where they live; real intentionality about their community and excellent senses of humour. Big admirer of The Avantgardevegan, but his goal is to open a restaurant so I take inspiration from his food but adhere day to day to more simple less processed foods in general.     Yes, I grew up in the 50s so ate plenty of chicken pot pies .. but I've been vegan for ages now and make it in a similar way to when I was a kid (peas, carrots, corn, onion, celery, etc). I've never used a chickpea crust before although I made something once using chickpea flour and it was the only thing I tasted. Is that the case with this recipe? 🌹

    I always liked the idea of pot pie but I could NEVER stomach chicken ( it coming from meat, for some reason it was more real coming from chicken). This is everything I wanted growing up! I will definitely be trying this recipe as soon as possible. I appreciate the love you put into it !

    This looks SOO GOOD. I grew up with chicken pot pie, it was one of our family's favorite recipes. This looks like a dead ringer for the old family recipe, minus the dead bird :)

One request though, would you happen to have a nut free pie crust recipe? I understand nuts are a perfect vegan food, but I can't try some of your recipes because they have nuts as a central ingredient 😭

      Ray anansi Nuts can't be a perfect vegan food for those who have allergies to them since you can't eat them. Maybe you will have to consider some sort of grain unless you have gluten issues as an alternative.

      Ray anansi if you aren’t grain free, you could use a regular pie crust recipe and sub vegan butter or vegetable shortening? ☺️

      @@heatherberry6459 lots of really good chicken pot pies have mushrooms in them with the chicken, so I'd say just adding the mushrooms with the chickpeas would be perfect

    Hi, Caitlin! I noticed you didn't blind-bake the crust, didn't it come out soggy on the bottom or is there any trick to prevent that? I thought one always has to do that to prevent the dreaded soggy bottom.

    Mmm, thanks for the recipe :) I've been vegan for almost 5 years and my husband is almost fully transitioned, and since I've been vegan longer (and I am 100% whole food) I've been struggling to come up with ideas of things to make for him.     Since you were raised vegetarian, how do you determine if something taste like meat if you haven’t had it? do you use other people to taste test?

      I don’t know if you mean in general or about this specific video but She never said it tastes just like chicken pot pie. It’s chickpea pot pie, a take on the classic chicken pot pie. Meaning it takes on the essence of the classic recipe without the meat. There’s no meat substitute here. Although some could describe the chickpeas as something that fulfills its texture.

    If you use a wet fork to crimp the edges it won’t stick. Just re-wet it if it starts to stick.
