Oh, the color turned out beautiful! I'm definitely going to try the beat juice. I'll use citric acid instead of lemon juice so I don't change the flavor, but even strawberry jam color would probably benefit from beet juice. I make low sugar jam so it tends to brown up over time.
When I was little we would cut off the top and the bottom of the stocks and wash it. Then we would have a cup of sugar and we would dip the stocks into the sugar and eat it like that raw. It is a wonder we didn't die.
I wish i could find rhubard.. cant get it even feozen anymore down south

Possibly from sugar overload, but the rhubarb stalks are safe to eat.
That looks absolutely delicious! I have been wanting to make orange marmalade for awhile now! Now just have to find some rhubarb!
