I was born and raised and still live in New Mexico. Your "chili verde" is close to what is cooked and served here in NM, in my opinion. I am NOT an expert in what is cooked here in NM; however, I do cook authentic NM foods. I won't tell you the difference. Why? Because it's your wonderful creation, and it's your recipe! I would be proud to have a bowl of your wonderful chili verde!
Add some sour cream into the pot and make it creamy. It will also tone down some of the spicyness for those people with digestive issues. Leave it spicy, just tone it down some.
I believe those canned beans are 'cannelini" not canneloni, which are stuffed rolls of pasta. I use canned cannelini in a cilantro pesto recipe, but found them to be bigger than a cooked navy bean. However, the dictionary says they're a navy bean. Where have you written your recipe? Thank you for your wonderful, encouraging videos.
