Question, the Gracie diet doesn't allow Pork due to bacterial concerns. But what if you come from a culture (myself, Cuban) where Pork is very common? Are there any health concerns with Pork compared to Beef or Chicken besides disease?
I've read somewhere that the Gracies are jewish, though they don't talk about it a lot. That's probably why they are against pork. I've done my own share of research and I could never find anything wrong with pork, so long as it comes from a good farm. Pastured pork is the best, that's where the pigs have a wooded area they can root around in and get much better nutrition.
