    Went to a local Italian restaurant last night for some Alfredo f,, the guy gave me free bread and free salad and the recepie for the sauce wowwww I was so blessed! I had a homeless guy do some gardening that day and payed him well, so I felt I was blessed cus I blessed sombody!! Good deeds always come back!

    I've made many Alfredo sauces. Believe me when I tell you this. Once after Sautéed garlic, add a palm size of cream cheese. Smash it up over heat and mix with garlic. Then add heavy cream. And then parmesan. This has been a game changer, most amazing sauce I've ever had. Beats all the restaurants, and so simple. Cream cheese is a must!

    You can make the Alfredo sauce without using any wine and still will taste very good.

    I have made homemade Alfredo sauce before. I used cream cheese with low fat milk with garlic powder and a small amount of onions in it. I never thought about straining the sauce, Thanks for showing me this and also a better recipe than the one I make.

    Thanks for these videos. They're a big help. I have a question though. If I wanted to create a spinach alfredo, sort of like a pesto flavor I guess, could I just cook some spinach in the sauce or would I have to puree or something?

      If you want to add spinach to your Alfredo sauce, you can sauté the spinach and drain the liquid then you can add the Alfredo sauce.

    I added Butter, Mozzarella, Romano and Asiago to the mix.... DELICIOUS!!!! 🤤 😋

      We use heavy whipping cream to make the sauce.

    I thought that’s how you say shallots so when I made it at the restaurant I asked the owner to by me shallots and he said “what?” I then said it again and again he said “what?” Then I told him what I wanted to make and he said oh shallots! Lol I made it and the guests loved it!!! Thank you for teaching me!

    Try it with a splash of crème sherry, and a dash of nutmeg. Use Parmesan Regianno instead of regular Parmesan. It’s amazing.

    Hi there, I am a student of a Technical College of Nutrition and Household, and I've gotta say that I really enjoyed watching this recipe! I've only got one curious question though. I live in a country where Parmezan cheese is really expensive. Would it be okay for me to substitute that with Mozarella cheese?

      garoslaw You may use mozzarella cheese, but keep in mind that the flavor is going to be different. Also the cheese is not going to melt the same way as parmesan, so you may end up with a sauce that has strings of cheese in it. If you can find another dry cheese like Romano it would be much better.

      Its not the best solution. The mozzarella cheese has a more rubbery texture than parmesarn and it won't melt as much. Plus the flavor will not be the same. Good substitutions for Parmesan is cheeses like Asiago and Ramona. When I use asiago it taste exactly the same but it is a bit more saltier than Parmesan.

      Hi Ogunleye, You should be able to find heavy cream at any grocery store. Cream has a high fat content, so is milk and fat.

      You can change with bechamel sauce i think, just fresh milk(full cream to get the creamy) and onion pique with roux

    Hello Chef Mark. I am very curious; why would we strain the shallots (and just retain it's flavors) and not have them in the sauce with the pasta? Wouldn't keeping what's left of the shallots gives the dish more texture and bite? Or, is it that keeping the shallots spoils the originality of Fettuccine Alfredo? Thanks. (I have the acquired ingredients and am ready to try your recipe :) )

      Well if you want you may leave the shallots in the sauce, but if you want a silky sauce I would recommend straining the shallots.

      Water or white wine vinegar which is free of alcohol with flavour of white wine. Or, just deglaze the pan with heavy cream.

      U don't need to use wine. U could even juice white grape juice if you wanted that sweetness bit of a bite but wine is not necessary at all.

    I saw butter being recommended instead of olive oil somewhere else. What is the difference? Is olive oil better?

      Well olive oil is much healthier than butter, so if you want to use olive oil instead of butter that would be fine.

      +Menna Hassan Great question Meanna, the answer is no, not all the alcohol will evaporate from the sauce. Is hard to say the percentage of the alcohol that will remain in the sauce, but you will have some alcohol in the sauce, so is not alcohol free.

    How long was the cooking time?

      You want to cook the sauce until it gets to a nappe consistency, this means when it coats a spoon with a thin layer of sauce. About 10 - 12 minutes.
