APPLE CINNAMON PROTEIN MUFFIN RECIPE
2 cups rolled oats
1 apple, diced
2 scoops vanilla protein powder (I used whey)
4 egg whites
1 cup of non-fat Greek yogurt
2tbsp. turbinado sugar
2 tsp. cinnamon
½ tsp. baking powder
Pinch of kosher salt
Directions:
Pre-heat oven to 350
Prepare a muffin pan by either brushing with each with a little coconut oil or spraying with some cooking spray.
Combine all the ingredients in a large bowl and mix well. Once everything is combined, divide evenly amongst 12-muffins.
Bake for 18-20 minutes. Let cool and enjoy!
Makes 12 muffins.

This was so adorable. I made these for my husband to take in the morning on the way to work with his smoothie. I used a 1/4 c each of peanut butter chips, chocolate chips and raw peanuts instead of the apples. I also used brown sugar instead of turbinado. He loved them. Thank you for dedicating your precious time to share these recipes. Thumbs up for Katie.

34 weeks pregnant and diagnosed with gestational diabetes. been trying to find recipes for healthy snacks I can make at home that wont make me spike and I tried this one out , replacing the sugar with monk fruit extract and added hemp seeds instead of raisens. After 1 hr my sugar was 112 ! Thank you so much for this I can have it as a snack and its healthier than the bars they have in supermarkets or health stores !

Hi I'm a newbie from Central Oregon. I had to make these. Your daughter is a sweetie and a the cutest ham! I didn't have apples so used a banana and dates. I also used brown sugar & a little molasses, chocolate protein powder. They are still baking and smell so good it will soon wake up my hubby with the aroma! It worked the nose knows! Eating one now YUMMY!
