    SOURDOUGH DONUT RECIPE:
Those these donuts take a bit of forethought and practice, I promise they’re worth the effort. Make sure to follow the directions step-by-step which will ensure a non-lumpy dough. Tallow makes a great oil alternative if you don’t have lard on hand. Lastly, feel free to leave out the jam or serve it on the side if a piping bag is too much fuss for you. Custard or lemon curd would be great alternatives.
    For the preferment
    30 grams sourdough starter
    70 grams warm water
100 grams all purpose einkorn flour
    For the dough
    120 grams water
    60 grams sugar
    4 eggs
400 grams all purpose einkorn flour
    1 teaspoon salt
    60 grams butter
6 cups lard (or oil of choice) for frying
    2 cups jam
    Powdered sugar, for garnish
Mix together all the ingredients for the preferment. Set aside for a few hours until it’s warm and bubbly.
In a stand mixer fitted with the whisk, combine the preferment, water, and sugar. Mix until combined and let sit for 10 minutes.
Switch the whisk out for the dough hook on the stand mixer. Add the eggs, einkorn flour, and salt into the mixing bowl and mix for five minutes until it’s all combined.
Switch the whisk out for the paddle attachment on the stand mixer. Mix on medium speed and add in the butter 1 tablespoon at a time, waiting about 45 seconds between adding the next bit. This will take about five minutes total.
Cover the mixing bowl with plastic wrap and set the dough aside overnight at room temperature.
The next morning, use a plastic spatula to scrape the dough from the bowl onto a heavily floured work surface (a marble cutting board works well). Use your fingers to press it into a rectangle, rough 1” thick. Cut the dough into rounds using a donut cutter (or the opening of a glass). Set the donuts aside onto a heavily floured baking sheet. Continue with the remaining dough.
Cover the donuts and let them rise for an additional hour or two before frying.
When you’re ready to cook the donuts, heat the lard up in a large saucepan. Use a thermometer to ensure the lard has reached correct frying temperature (around 350 degrees).
Add a few donuts at a time into the lard and allow them to cook for 2 minutes per side, until cooked thoroughly. Use a slotted spoon to remove the donuts and set them aside onto a plate. Repeat the frying with the remaining donuts.
Prior to serving, use a piping bag to inject rough 2 tablespoons of jam into each donut and dust with powdered sugar.

Oh My Gosh! I am new around here, and I'm working my way backward (chronologically) through your videos. And I just heard your comment, after you couldn't get the jelly to come out of the pastry bag, about how maybe this was a sign as to how things are going to go this year. Hahahaha! Prophetic! 2020 was giving you a clue! Too funny.

I struggle so much when it comes to letting them be a part of the kitchen and a part of licking spoons and beaters. You are such an incredible inspiration and a testament of patience and faithfulness in your role as a mother, wife, and homemaker. I like you as parents because your thoughts are for your children and helping them develop good habits. You are one of the few channels I watch for vlogs from. and get excited when I see one. I know you will speak softly and impart some information that's valid even for non-farmers. Please keep blessing us. I pray you will see your needs and wants fulfilled this year. I’d love to see what you eat in a week. I do well fixing wholesome healthy foods, but consistency is where I fail. Especially when busy on the farm, in the gardens, or working on projects. My mom made those once in awhile, but what she did was when the dough was yet she would make round circles and then put the filling (jam or mashed potatoes with fried onions and mushrooms or any filling you like) and pinch them closed, then let them sit and rise while the oil heats. We call these parashki in Russian.

You might try growing a few potatoes on top of the soil and cover them with a thick but loose pile of straw You don't want sunlight to get to them and l turn them green and taste horrible!!. I was taught to grow potatoes that way by my Italian grandfather and to harvest, you just pull back the straw and there sits a potato crop!

A proposal: An experiment; one line of potatoes grown in the ground and one line grown in case containers (same variety) see which performs best. Add exactly the same growing medium to each except don't use soil in the containers. Use manure or compost but what ever you use add it to the ground also so it's a fair experiment. What do you think? 🙂

Love your content. Do you or anyone else have suggestions for me? I'm almost 50. Will be starting a new life on 12 acres of land. There's nothing on the land. Hubby and I will need water, electricity, etc. I'm not ready to be a total off grid girl. (I could do it for a "season.") I need a house design that is affordable, durable, and efficient. Some have suggested a pole barn. In the Midwest, we call these structures by a brand name, Morton buildings. At our age, we can't do the remodel an old house thing again like we did when we were first married. Did you ever see the Tom Hanks movie "Money Pit"? Been there, done that, can't do it again.

Hi Gals and Guys, on that new can opener I would suggest a new Swing-Away can opener. You can get them from Amazon. They are a little expensive for a can opener but well worth the price. These can openers are the easiest I've ever found to use in all my 70 years.

Happy New Year! Thanks for allowing us in to your journey! It's a goal of ours to have a few acres one day and feed ourselves - esp important to pass down to our kiddos, Lochlan! You guys are a fabulous inspiration!!! And btw, did you guys do a video on just how you created the log cabin look on your kitchen walls??? I'd LOVE to know! The kitchen turned out beautifully!!! xoxo

Hahahaha I watched this now here in July, almost August, of 2020 and could one have ever guessed that the doughnuts would only be a small glimpse into what 2020 would look like 😂 It's not really funny, but one must find humor somewhere right?

Ollieboellen is the Dutch name of the doughnuts made on New Years Day! Usually with raisins then dusted with icing sugar...best eat right away!

You inspire me....thank you!! When you were talking about your flowers, I know you love and follow Tasha Tudors garden style. I'd love to know where to purchase some of the plants she lists in her books. We raise the majority of food as well ,can and I have perennial gardens all over...I dont think you ever get enough flowers. Happy 2020.

This took me back to My childhood on our farm of 400 ac, in Michigan my dad would make sourdough donuts on an school brake it was our NaNa favorite thing to make for all of us 💜 She lived 4 miles away on the original homestead an al of Britton Cork State an M 21 was all of the farm’s of the 7 boys / brothers. Also most all of the 7 girls lived on side roads an my NaNa would make them an somehow most the family would show up 🥰Thank you for the triggers to remember such a loved memory. God bless an May 2020 be the most blessed yet in all our lives 💕
