How to make a Vegan Curry using chickpeas

- Hello my lovely viewers! as some of you may or may not know about me I try to eat healthy as much as possible, even if you can tell by how I look that I don't always succeed haha! This is a great way of getting protein without stuffing yourself full of fatty meat and it tastes fantastic so if your in need of a dish like that give this a try!

Ingredients:
3 tablespoons of vegatable oil
1 tsp cumin seeds
1 bay leaf
3 cardamom pods
2 inches cinnamon stick (equivalent cassia bark)
1 medium onion - diced
1 tsp salt
1 heaped tsp garlic paste
1 heaped tsp ginger paste
2 green chillies - sliced
1 heaped tablespoon of tomato puree
1 tsp dried fenugreek leaves - crushed
1 diced tomato
400g chick peas - drained and washed
pinch of coriander for garnish
spice mix:
1/2 tsp cumin powder
1/2 tsp corainder powder
1 tsp curry powder
1/2 tsp chilli powder
1 heaped tsp chat masala powder
1/2 tsp garam masala powder - dont mix with your other spices, you will add it later.
Method:
serves 1 as main, 2 as a side.
make sure to have all your ingredients prepped as above before jumping into cooking!
Step 1, add 3 tablespoons of vegetable oil to an appropriately sized pan and put on a medium/high heat.
add in your teaspoon of cumin seeds, bay leaf, cardamon pods and cinnamon stick/cassia bark. fry until you hear the cumin seeds crackle.
Step 2, when you hear the cumin seeds begin to crackle you can add your onions and stir to combine.
also add your teaspoon each of ginger and garlic paste and stir fry for a minute before adding your green chillies.
Continue to stir fry for another 6-10 minutes or until your onions are just becoming golden and translucent.
Step 3, Add your spice mix apart from your garam masala powder. mix well before adding in your tomato puree,
and fresh diced tomato. fry until the tomato releases its moisture into the dish and then add a splash of water and cook out for 4-5 minutes until the suace thickens again.
Step 4, once your dish has reduced slightly add in your 400g of chick peas, make sure they have been rinsed and cook out for a further 5 or so minutes until the oil rises to the top of the dish
Once that oil comes through and you see the darker spots of liquid on top of the sauce of your dish, add in your garam masala powder for a final extra bit of flavour before stirring and let reduce until desired consistency.
Voila! once your sauce is at the desired consistency serve over some boiled rice or roti and enjoy!

Most vegetarian Indian dishes are vegan. Just substitute butter for olive oil
I'd love to see more vegetarian too. Especially his take on Saag Paneer... Not sure how you Veganize that though.
@@rix911 There are a lot of vegan alternatives to just about everything. You can make your own vegan cheese or buy some. Tofu can have a consistency like cheese. I never had Saag Paneer so I can't say the best way to make it vegan, but it's pretty easy to make anything vegan, with varying levels of success, and to get the most out of it with taste try different methods, recipes, and products to get there.

I am not going to pretend to be a novice when it comes to cooking chickpeas, but I did come and find your recipe to give it a try this Ramadan. One of the reasons why I ALWAYS come to your recipes first is because of the fact that you actually list your ingredients in your description. I know it takes effort on your part, but mashaAllah it is one more thing that sets you apart from all the other chefs that I choose not to follow. I obviously follow your channel 👏.

Thanks Latif, those chickpeas rock! I wash 500g of dried chickpeas, soak them in cold water overnight, pop them in my electric pressure cooker with 1.5 cups water, set to 5 minutes on full pressure then do 'natural release' for 20-25 minutes. They come out buttery and are cheaper than canned (I think tastier too). _Chana_ is very nutritious-high protein, low GI. So tasty when still warm with a drizzle of extra virgin olive oil, a little of the cooking liquid and a sprinkle of salt.
You are right about the knife......I have one for more than 12 years...black handled....still as sharp as new...cannot be without it in the kitchen.....your doing a great job......best wishes

Greetings from New Zealand. Done this tonight for two so double the recipe with 400 grams chickpeas and 400 potatoes as I did not have enough chickpeas. Did everything in a wok then transferred to a crockpot to cook the potatoes in minimum time. Added the Garam Masala and coriander at the end: Yum... Thank you for your recipes. Love this dish. I went vegan and omitted the cream from my curry base (your recipe) and used my cream-less vegan curry base instead of water. OMG! This was the best. I had leftovers and it seems to be better the next day. I ran out of rice (a mortal sin) but had some elbow pasta, so I cooked some up and topped it with the leftovers. That too was yummy. I think this will become a regular dish for me. Thank you for showing us how this is done. I’m now a huge fan. More vegan style recipes please! 😊

Nearly exactly the same way that I make mine since I add coriander seeds as well as cumin seeds to start with.
Not a vegan but my doc says my cholesterol levels are way too high so this is something I cook a lot.

I spend a day with my daughter making some of your video's. This has given us a big negative downside.... This was SO GOOD that we now dislike most of the Indian restaurants we have here in the Netherlands. We made this dish but also the base gravy (briljant) the chicken vindaloo and the Saag, All great !! thank you so much.
