  • Sourdough Purple Sweet Potato Bread / Delicious Sweet Potato Bread with Mashed Purple Sweet Potatoes
    Laminated to make bicolor marble look.
    I made 2 versions - one with 130g mashed sweet potatoes and the other with 190g mashed sweet potatoes (please see the ingredients below).
    Made with natural yeast sourdough starter.
    Beautiful sourdough batard!
    It has a round belly and bunny ear.

    **Room temperature is around 75-76F/24-25C - 1 lamination and 3 sets of coil fold and 3 1/2 - 4 hours or longer fermentation until 80-90% rise. If the room temperature is higher or lower the fermentation time can be shorter or longer**

    40g strong starter
    40g bread flour
    22g water
    Dough ingredients - divide dough into 7:3 (598g:256g) and 190g mashed sweet potatoes:

    **실내온도 75-76F/24-25C 3번 말아서 접기한후 3 1/2 - 4시간 거의 80-90% 늘도록 발효해요. 만약 실내온도가 높거나 낮으면 발효시간이 짧거나 길수 있어요**

      You can sprinkle the purple sweet potato powder during lamination. You can use any amount of sweet potato powder between 15-40g and increase 10g water.

      Hi Mooi,
      My mother starter is 100% hydration which I keep in the refrigerator. I use King Arthur bread flour (12.7% protein) for most of bread baking.

    What is the sweet purple sweet potato żafe of plus as it looks stiff

      Purple sweet potatoes are purple inside. When it is boiled stiff just like regular potatoes. You can buy at the Asian grocery markets.

      I use 10in/25cm oval shaped banneton and 9in/22.86cm diameter round banneton for all my artisan bread.

    Hi, the reason why I asked you another way to contact you in the Best Asian Bakery Recipes group post is because I want to suggest a way to increase subscribers for your UA-cam channel. I don't feel appropriate to make the suggestion there.
    Your recipes are very good and doable for home bakers. If you convert your recipes using a bread machine to make the dough or a finished loaf, then you can post your recipes in various bread machine baking FB groups and potentially getting more subscribers. Hope this helps!

      I love your suggestions! I have not tried again entire baking in the bread maker for a long time. I only used for a short time when I purchased the bread maker and did not like the bread.
      Now I have many great bread recipes could use the bread maker to make great bread.

      A lot of the folks who have a bread machine use the dough setting, take out and shape the dough, and bake the bread in oven. That is what I do when I follow your recipes. So when you convert your recipes, it will just cover the steps up till the first proof in the bread maker. Does it make sense?
