After the shaping, your recipe says sit for 15mins. 1) Do I wait till dough has increased in volume (maybe more than 15mins) before putting into the fridge to retard? 2) After removing from fridge, should I let it return to room temp before putting to oven to bake? Thank you
I’m not this baker but maybe I can help. Ive been making sourdough for a while now. After shaping and placing in the proofing basket I let my dough increase in size a bit before placing in the fridge. This can take anywhere from 15 to 30 min. And to answer your other question, you can bake straight from the fridge. In fact, the cold helps with creating steam in your Dutch oven.
