I cut up 2 pineapples (how do you tell what size they are?) and made syrup for the recipe for 1 XL pineapple. I am glad I didn't make more, because I had plenty leftover after putting the cut up pineapple and syrup into 4 pint jars. No worries on the extra syrup, because we will figure out how to mix it into yummy tropical drinks!
I can`t wait to try this one!! Thanks so much for sharing..I`d have never thought to do this! Wish my grandmother was still alive to see all the 'other things' we are able to can past plain fruits & veggies!
This sounds so good! Nice change from using my pressure canner, which i have been doing alot of. Canning is my favorite thing to do. I can a few times a week lol. I just love it❤. Im gonna try this one this week. Thanks!

Anyway, I wanted to first of all say that I love how you let you viewers know about safe canning practices, and proper canning guidelines. For me, I am a new canner, & will have my very first garden this year. Although it is a community garden plot in my little town, (I live in a sm 1 bedroom apt with no place to grow anything.) Non the less I am sooo excited!! Do you have a garden?, and what do you think would do well in a 20' x 4' raised garden bed? I have no idea!
Congratulations on your garden. Gardening is so much fun. My favorites are Tomatoes, green beans and peppers. I always grew a variety of each. Lots of great ways to can them 😁
I can't wait to try this! Do you ever can chicken breast in half pint jars? I'd like to raw pack half pints for chicken salad this summer but can't find any info on safety or processing times so I thought I'd ask you since you're our canning guru 😊

If you have the original boxes your jars came in those work great! If not, wrap your jars in paper towels or small bubble wrap. They are heavy so I would pack them in smaller boxes no more than a dozen per box 😊
Love this idea but wondering where it shows you can use extract in safe canning? I phoned the powers that be when I thought of adding extract to jelly and they said "No, only essence oils". Could you please direct me to where it states it's been tested? I'd love the versatility of being able to add them.
I’m not sure what powers that be you spoke with but there’s nothing unsafe about using an extract. I find it odd they would advocate essence oils as we are told not to use oils unless specifically stated in a tested recipe. Extracts are flavorings extracted using alcohol so in essence are flavored alcohol and alcohol is used in many tested canning recipes. Here’s a recipe from bernardin, their recipes are trusted and tested, specifically using vanilla extract www.bernardin.ca/recipes/en/praline-syrup.htm

I had considered using coconut water but I can’t find any documentation that it’s ok in canning. Using the coconut extract is a great alternative that I know is safe
Ok I’ll use that then thank you I may use the coconut rum instead since I have that and no extract what timing because my pineapple just got ripe thank you

Canned two pineapples today and the coconut extract was a wonderful addition. I will be canning more for sure. Thank you for the idea.

You can always safely go down in size. Just process for pints 😊
