- This video is one of a series of four produced by the Oregon State University Extension Service in Clackamas County that explains the Oregon Farm Direct Marketing Law (OFDML) and illustrates science-based, step-by-step food preservation techniques. In this video we demonstrate how to make a simple fruit syrup using a water bath canner. Can you use like half the sugar?
Can you thicken as recommended with Corn Starch BEFORE canning and processing?
Thank you for the question Tim. It is not safe to add cornstarch before processing, as it affects the viscosity of the mixture, which affects the degree of heat penetration during processing, and ultimately food safety. It is “OK,” however, to add cornstarch to the mixture after processing and prior to serving.
You did not show the sanitation of the lids a very important step
Is it me or did she remove the lid.. I didn't think you removed the lid until the processing time was completed, otherwise you have to start all over again with your processing time?
as long as the water remains at a boil, you can lift the lid to check.
Lemon juice would make it safer
