I was thinking the same thing, so I’m gonna trade the flake for gochujang. It’s a Korean saucy paste with more flavors but has only a small amount of chili flake!
Gochujang(Red pepper paste) is not just chili paste. It is made by mixing doenjang(soybean paste) and red pepper powder made by fermenting beans. I think soybean paste is irreplaceable because it is an ingredient that gives off a unique flavor. But you can make it anyway, there is alternate recipes not using Gochujang.
I think this Budae Jigae is spicy because of kimchi, so I recommend paprika powder instead of kimchi. In Korean tv show, a famous chef used paprika powder to reduce spiciness. ua-cam.com/video/TgJ2EKI7ZZw/v-deo.html
@최형준 there's non-spicy version of Budae Jjigae (i already know it's exist bc one Korean UA-camr/chef made this) i just ask if this spicy version was very spicy or not bc someone said it's very spicy but thank you tho
@최형준 But some of the reason why Budae Jjigae are spicy bc they add more Gochugaru and Gochujang But if we don't like spicy food we just omit Gochugaru and Gochujang or we should use Cabbage or Crown Daisy instead of Kimchi :)

The Budae-jjigae is called "Korean swill", which is made by Koreans based on the leftover swill of the US military. Only those made in South Korea are authentic, because we don't have US military swill buckets here.

Gochujang isn't that spicy, but if you can't handle heat that well, it is best to lessen it 🙂
