Great video, as for the gauges go, I would orient them so normal or max temp, pressure, or whatever is directly vertical, so with one very quick glance at the dash while driving you know everything is good.

Tom's just a big boy because of the peanut butter and jelly sandwich! I'm 62 and still enjoy the pb & jd sandwich with the crust cut off! I use the same company for my drill bits!
Greetings from Germany... I've an idea for the old Dash Board Panel... Shop wall art... with old gauge face plates, maybe a wall clock in the old speedometer... Oops...! Well by the time I typed this comment you had all ready chopped it up...! Oh well my idea was a little too late... 🤭 Happy Holidays to you and family.
Walnut plywood or some sort of vinier over the dash would look nice. Then put high gloss varnish over it. Once the varnish is on get a steel ruler and flatten out the varnish, Then sand and cutting polish it. When you give it the final polish it should look lovely.
Have you ever thought about putting in an RV camera system? I did 4 cameras on my Tundra. One camera in front of the front wheels to help with tire placement, one in the grill to see over crests, and one on the back axle looking forward for ground clearance.
I found that a 90 after the cat can add a little back pressure to still have a cool exhaust but not objectionabley loud. The only time that I cut my exhaust was to replace it with something sportier but not too loud. This doesn't include ones that rusted out and fell off.
I did nearly the exact setup on my 87. I used factory sliders under the 1” tune frame with seats from a 94 Dodge 1/2 ton. Doesn’t work quite like I want but I might copy your idea and see how it works

Nice, one thing I never liked about square bodies is if your over 6' tall you didn't have headroom. Looks a lot more comfortable.
Add a center console with a subwoofer facing down, 2 holders for Stanley's/cups, small storage (for PB&J) and padded armrest.

The threads in the floor holding the seat in were originally metric, that's why 3/8 bolts didn't thread in properly
Now you can machine turn the dash panel for a classic look. Another thing you could do is to sand blast the panels to get a mat look.
