    We live in central California. On memorial day my husband, Kris, bbq hamburgers, hotdogs and grilled some onions. It was simple and delicious. Our weather was unusually around 75 - 85 degrees. Just wonderful. We enjoy yours and Shannons videos. We're in our 70ies and still enjoying whatever we're able to do. God bless you all. 🇺🇸

    If you have ever experienced an asphalt parking lot in the full sun, that about sums up summer here in Georgia. If you want the full effect then hang out in that same hot parking lot when it rains just a little bit. Love your videos Sir and Madam.

    Brother Kent, I'm in Vero beach florida , and have cooked all over , now in vero 98 , real feel , he'll ish. around hot and humid through out the summers , south even worse . Love ya my friend's .

    For y'all that don't know what a chipotle pepper is, it's a smoked jalapeno pepper. If found in a can it's in adobo sauce.. His joke about never cooking anything without jalapenos was tongue and cheek. Hilarious.

    On Sunday (5/28/2023), I smoked some chicken wings at 275-300 degrees with apple wood. It was about 75 degrees here in southeastern Wisconsin. Thanks for all the shout outs to our cheese.

    What you made is what I called pork and beans. Or I should say my dad’s version of pork and beans. Pop died several years back. This gives me one hell of a starting point to recreate a childhood memory! Thanks!

    Growing up and living just outside of St Louis still, pork steaks on the grill are a staple. Always with baked beans on the side and potato salad. Incorporating the beans with the pork steaks is an amazing idea!! I’ll be trying this soon Cowboy Kent.

      Grew up in Southeast MO and living in STL Co. now. My DNA is probably 50% pork steak. The price can't be beat and I usually have a pack in the freezer for the grill. My cousins in Jeff. Co. didn't put beans on them, but threw them in an aluminum pan of barbecue sauce after grilling. Let it simmer on low on the gas grill. Literally fell apart. Good stuff.

      You would be surprised how hard it is to find them in other parts of the country. Fortunately, we can get pork butt most of the year and cut boneless steaks off of them.

      I made this Friday evening and took leftovers in to work Saturday. They were a huge hit. One of my buddies even saying ‘this is the best pork steak I’ve ever had’. No joke. They were phenomenal.

    How did I miss this video? This recipe looks awesome but I'll probably not try it for a few weeks. Its insanely hot in North East Arkansas. Temp in the mid 90's with about 80% humidity, miserable weather to be grilling. I usually oven cook pork steak in a pan of gravy low and slow. This cooked with the baked beans has to be good. The secret to good baked beans is Hatch Green Chilies. You get lots of chili flavor, yet they aren't so hot the wife objects. Thank you and God bless.

    We're 90 here in north Texas today with about 50% humidity after the rain yesterday. I'm absolutely loving this meal! I never thought of putting the pork steaks in the beans to finish cooking! Great, and tasty idea!

    I'm from Corning, NY and I would never leave out the mustard, or pickle relish, but I never thought of sour cream and creame cheese (although I put cream cheese in my potato filling for my Pierogi's)! Thanks for the amazing idea to top the pork steak with the beans! I've got to try it!

    Hey Kent we are on the space coast of Florida. Great video! I cook steaks on my kettle grill directly with oak lump charcoal to sear it flipping often until brown. Then, I cook it on the indirect side until medium rare :). I use a gravity 560 smoker also! I don’t mind the heat!!! I’ve recently been learning how to properly cook in a wok and I use a 270,000 btu burner outside. I love outdoor cooking in Florida. Besides that air conditioning feels so good when you go back inside after being in the heat😊! But, anyway, I cook outside all year long over here!

    This is good eatin'! Have done the meal similarly, but never thought to do the steaks and beans together, great idea. Molasses in my beans, along with a little powdered mustard and a sprinkle of cinnamon. I can't do any of the hot peppers because I am really allergic to them, but the rest of my ingredients are like yours. I'm from Missouri, and pork steaks are a summer staple. Our son moved to New Jersey for school and was dumbfounded when they didn't know what a pork steak was. He told the butcher, just slice me a pork butt into 3/4 inch slices. The butcher said, "Damn, I learned something new today!" They both had a good laugh. Instead of the cream cheese in the potato salad, I add some ranch dressing, oh, and a little of the bacon grease, 'cause everything's better with bacon grease 😋. Love your videos, keep them coming!

    You were asking what the temperature is like where we are. I've lived in the snow in Southern California and in San Diego for 30 years. It doesn't matter what time of year it is it just matters what temperature is your smoker and your barbecue. My opinion. 🤠🇺🇲

    Hey Kent and Shannon! Last weekend, here in NW Georgia, I cooked a small 10 lb. Beef Brisket on the Char Griller Akorn Smoker. It, and our Baked Beans & Homemade Bread were delicious! The weather here thus-far is the best we have had in years. Our high temps have mostly been in the 70's and 80's F' going into June. When it gets hot here, in the 90's and 100's, we just have to tough it out... Many times in mid-summer when the humidity is so thick it can be cut with a knife, I've wished we had some of your Oklahoma breeze just to stir things up! Thank you for another Great Video Recipe!

    Thanks Kent and Shannon. Great video. We've been cooking chicken in a huie huie sauce. I have no idea if I spelled it correctly I just bought it and she cooked it. We've had some warm days this spring but it is fairly cool right now. The mountains are full of snow so we're loving the cool weather. hope the snow lasts till August.     What I've noticed with store-bought pork lately (last several years) is that the flavor is like garbage. I think they are just fattening them up on the cheapest stuff they can find.

      Exactly right, when I buy pork steak at Kroger you're right it has no flavor you got to put a ton of spice on it, but when I go to the local butcher in town and get pork chops because they don't have pork steak all I do is put a little salt pepper and garlic on it and it's amazing 😊

    Kent proves he can cook without using jalapeños by using chipotle peppers instead, which are smoked jalapeños 😂. Great recipe though, I’m definitely going to try it in the best Spring weather we’ve had in years here in the NC piedmont.

    I made my battle buddy this similar meal back in 2005 in Iraq expect for the potato salad (which sounds delicious) for is 30th Birthday. I had his wife sneak the pork steaks, beans, some potatoes for baking, Charcoal, and his cake on a air force supply flight from Germany. We were all good friends with the pilots (yes Army and Air force can be friends LOL). It was one of the best meals I think we had that year. We made a grill from 55 gallon drums. It was a great little party in the middle of shit hole. If I remember correctly temps was still well above 130 degrees that time of year. (we also acquired some other ingredients and stuff from the chow hall).

    Bonjour Ken, myself, other half & Dog are doing a 10 day road trip along the D Day beaches in Normandy, France. We are currently staying at Utah Beach and moving on to Omaha Beach tomorrow for 3 days we were discussing what supplies to buy for meals, this recipe is now on the menu for Saturday night while at Omaha Beach. Quite appropriate eating an american inspired dish in such a iconic setting whilst paying our respects to those who did not return. I am a veteran from the British Army and thank you for your fantastic channel. Nearly forgot, it's windy and fresh but dry at 64f. Keep up the good work, both of you 👍

    Gulf Coast here. I have a Blackstone and gas grill on my screened-in back patio (smoker and Weber Kettle are outside the screened-in portion). I cooked some strip steaks last week. It was 92F on the patio when I fired the grill up. When I took the steaks off after 10 minutes of heating the grill and five minutes of cooking it was 104F. Humidity was 86%. Nothing like having to make sure you're hydrating properly before cooking dinner. :)

    It has been up to 106 this week here in Meridian, Idaho. It has been too hot to cook indoors as it usually is this time of year. I just love it sitting next to my Weber Kettle Grill slow cooking a roast or a chicken, sometime a meatloaf or even roasted corn. It all comes out good. I use plumb wood from my own yard to smoke and it is pretty good. I like to add some vegetables to the grill and roast them right along side. Love your show and I love your other half Shannon the cheerful too. Say Hey to her for me.

    Spent all my life in Texas and recently moved to Mississippi. When people talk about a dry heat being more tolerable they are spot on! Cooked out yesterday and it was 94 but with the 50% humidity it made the heat index 103! That kind of temp you walk out and it feels like you opened the door to a sauna!

    In San Diego County about 8 miles from the Pacific Ocean, it was Gloomy and Drizzling all day until about 4pm with a peak of Sun. High 60's. Really mild for This Desert Climate, but it is May Grey/ June Gloom.
    Did get Some Carne Asada Grilled up in Salute to Our Fallen Veteran's...

    When I lived in Houston I didn't know anyone that grilled. Everyone had an Old Smokey smoker (even though it's sold as a grill). Low and slow, all day, start in the morning, be ready for dinner.

    Hey Kent, here in the northeast the last 4 days have been like this ; 86 sunny, 91 sunny . 50 cold & rain, 51 rain, day 5 maybe 70 partly sunny ?....it's new england even the weathermen haven't got a clue. BBQ outside becomes a real challenge!!! But we will prevail.I have a collection of your recipes which I make on a regular basis... it's good honest food which brings a lot of happiness to my family, Thank you Kent & Shannon.

    NC Coast. Today the temp is 72, but the humidity still hits ya a bit. But, when it's 85+ degrees, cooking on the grill is a bit harsh. But, it's a necessary thing, my brother!

      @@CowboyKentRollins Thanks. Today was cool. Decided to grill Some leg quarters on my gas grill. Made a very very rookie mistake. I thought that I'd left it on medium for a couple minutes in order to sear the skin. Then the plan was to turn off the middle 2 burners and cook them offset until they were done. The other mistake was to go inside for a few minutes while it seared. When I came back out, I discovered that A) the burners were on full blast, b) the leg quarters skins were burnt to a crisp, c) the fire that had caught on the chicken grease and then the skin had blazed so hot that the inside layer of the lid had pealed back like charred paper and d) the grill tongs laying on the side of the grill were so hot they couldn't be used to pick up the burnt chicken! Total loss! You would not be proud of me today, my friend.

    Up here in Oregon today it’s 98 but it is Linda’s and mine 51 years anniversary so we are heading to the Texas Roadhouse for dinner. Like you, that chains restaurant like veterans. Every veteran eats free. So we try to thank them when every chance we can. I want to thank you and Shanon for thanking veterans.

    You lead by example.... You and Shann are loved greatly..... Lead on... :) South East Idaho.... it was about 75 degrees (F) very low humidity and it was very much a blessing to eat outside for a change....

    Right now its not too bad, (95 deg.) but Mid-June thru August I don't need a lit smoker, I just sit the meat next to the apple wood chunks and let the Phoenix Arizona heat do it's thing. Great video, thanks again for sharing.

    It's ninety degrees when I grill in South Louisiana. Today the humidity is very low, 40% RH. But when the humidity is high 80%+ I put the grill near the patio door (and a chair inside) but I keep moving from the stove to the grill.

    I'm in Ga and it's 7:30 pm now and it's 78° love watching your videos. My mom is 90 and on hospice and she can listen to you while I'm watching cause she can't see good. Every day when I watch your video she ask what's he cooking today. She enjoys it she's from old school country cooking and I've cook some steaks like I watched you cook and I use wood to cook with. I didn't know you could by it in the stores like that I always liked a steak cooked on wood. 😊

    Ken you just added jalapeno peppers to your beans with the chipotle peppers. As you know, chipotle peppers are mature red abalone peppers.

    WOW, Sir.... you hit it out of the ballpark with this one!
    I just made both recipes. While the potato salad was amazing, I don't have words for the pork steak/ beans.
    Since I don't have a charcoal grill at the moment, I used a pressure cooker to cook the beans/ pork. It turned out freaking delicious! Your list of ingredients were perfect. I wouldn't change a thing. (I used the optional blend).
    Thank you! I'll impress a few folks with this one!
    I'm sooo jealous of those cowboys!

    Here on the east coadt of Central Florida we are normally about 90°F by June 1st, but of late, the Lord has been giving us a short respite. During our 6 month long summers, the heat and humidity are generally about the same. Am looking forward to putting this recipe together myself over the weekend.

    East Tennessee is still mild. Low 80's Burgers, red potato salad with diced sweet pickles, cheese, mayo, sour cream and boiled eggs. Baked beans with MUSTARD, Ketchup, Brown Sugar, splash of white vinegar. LIfe is good. Stay well.

    I'm in Louisiana. We have so many rice fields and crawfish lakes in Acadiana, Louisiana that the humidity is higher than surrounding areas, except for the coast. So, higher heat is best in the beginning, then break out the shovel to remove some of the coals. Natural gas smokers are best because the odorant doesn't seem to affect the taste like propane does.     I love your red-skinned potato salad. As a personal preference, I also add sweet pickle relish and capers. Sometimes, I'll add pico de gallo (diced onion, garlic, cilantro, tomato, and jalapenos) dressing when I do not have red or green onions. I live in an apartment in Southern California so all my meats have to be oven prepared. So high temps and humidity are regulated by my AC. I've since taken a page from you and added sour cream and cream cheese to my potato salads, plus a variety of mustard flavors, pico de gallo, and capers. With El Nino operating off the coast, temps have been unseasonably cool in the southland with cloud covers that burn off by high noon and temps soaring into the high 70s. August will be a killer with temps in the 100s and high humidity. As a retired Army veteran I always get a tear in my eye when you thank all the vets. It makes the hard times worth it.     I live thirty minutes north of Galveston island here in Texas. Temps this week have averaged 104° with humidity in the +90° range. I prefer mesquite or pecan wood to smoke with. Shade is imperative. God bless y'all!

    Onion
    Bell Peppers
    Adobo Prppers
    Liquid smoke
    Worchester
    Garlic
    BBQ Sauce
    Franks sauce
    Only thing I would change next time. Bacon!
    And I’m a perfectionist in the kitchen!

    Here in Ontario Canada we are sitting at 30c. I've been doing a lot of stuff out on the grill. Definitely going to try this meal. And the baked potato salad looks like a good lunch box idea.
