    Smoked Chops are always good if you think you’ll have leftovers for a few days. Grilling is a Favorite if you have a great dry rub to apply. In my opinion these are my options.

    Now that's what you call pork chops with the thickness of them and they looked absolutely delicious as always kent. I hope that head supervisor cletus was happy with the cooking method.     When we butcher a hog. we generally cut our pork chops about an inch think. This winter, and matanza time. We will go for the thicker pork chops. Of course with the bonus of your great sauce additives. Loving your videos so keep them coming our way!

    I always love your vids. I must confess, my favorite part of this one wasn't the excellent cooking. It was when you and the pups were in the tent during the rain. It just looked like a loving family of pups hanging with dad.

    Mr. Rollins, I love a big thick chop, but I must defend the thin ones! They're perfect for both a quick pan-fried meal when you haven't much time and putting a lovely parmesan crust on before pan- or deep-frying. You definitely have to be quick with them, though, and avoid over-cooking them since they dry out easily.

      I agree, even if you want a quick-grill ... I marinated some thin-cut chops that my girlfriend bought in teriyaki sauce for about two hours and grilled them on our gas grill that doesn't put out a lot of BTUs because it's a cheapy ... they turned out wonderful, the sugar in the teriyaki helped develop a nice char around the edges of the chops too.

    I used to have trouble pronouncing Worcestershire sauce until I did some research into old English. The word is Anglo-Saxon and is pronounced Woos (or Wiss) - ter- shy- er (plus sauce). The first r is almost silent, the ces is a soft s sound, ter is ter and shire is shy -er. If you lived near Boston and Worcester (Woo-ss -ter) you would soon master the pronunciation. Great show - even with the rain.

    Kent those pork chops looked so delicious! My mother cooked pork chops so long that you could have used them to resole your work boots. Dad and I called them "chainsaw pork chops" because it took a chainsaw to cut them.😊

    The ONLY reason to buy thin cut pork is because you don't know how to cook it. Pork is not a set-it-and-forget-it meat. It takes a tiny bit more effort (not much, but just a bit).

    Greetings from a regular UK follower, Kent and Shannon. Thanks for your great channel (and books). I live in one of England's many shire counties - Leicestershire which is simply pronounced lestersheer. In the same way, Worcestershire is simple - woostersheer. The trouble is, I've never seen pork chops that size here. I'll have chat with the butcher!

    The audio mixing sounds great here too! In older videos, i had to turn the musical parts down cause it was like four times louder. This video, I didnt have to adjust the volume at all! It was very good sounding and well mixed

    Grocery store pork chops are usually 3/4" thick if you're lucky. I've bought thick cut from Schawn's and Omaha Steaks. They are about 1 1/4" to 1 1/2" thick and keep juices so much better. Thank you and Shannon and the pups for the fun and educational videos. Papa Bob in Washington, MO.

    I love thick pork chops. Best I've had was at a restaurant near Paduca, Ky. It was 2" thick. I buy mine from Wild Fork - 1 1/2" free range heirloom (Berkshire) pork; a little pricey but worth it. The meat is red not light pink or "the other white meat." I usually cook using the reverse sear method. Half inch of fat is just right for me.

    I agree with you Kent. I put pork steaks on the grill and they're absolutely delicious and tender but you can't put them on direct heat until the very end and they turned out extremely tender also. Cletus tried to be the star of the show today. How wonderful is that. I love to see Cletus and all the pups pigs for 10 years old. Wow he's up there and yes he does have manners.     Them are some GREAT looking chops. I used to work in the office for a pork slaughter house and our hog buyer always taught us that the greatest sin was overcooking that meat. He liked his chops a little pink on the inside. An amazing food to be sure.

    I did that dry brine pork chop recipe you put out some time ago and it was delicious. I dry brine most everything, so anything recommending a dry brine is my go to.

    As a half Mexican, I’m ashamed that I don’t use like enough for my cooking. That’s my issue with pork chops. I cook to temp but they never seem tender enough. Gonna have to make lime a staple in the house

    Those pork chops look WONDERFUL and, I surprised to say it, but I'd even try some of your asparagus. It certainly looks better than any I've tried before.
    Cletus was a good and very attentive lad today. Bravo!
    Watching the rain in west OK or the TX panhandle is better than any regular TV show!!

Be sure to pass my thanks on to her for always including random photo-shots and sounds of the cattle belly deep in the farm tank, occasional critters (especially the paid taste testers), the weather and countryside! For me, they are the seasoning in your videos!

    This is a great recipe. I was making all the same mistakes Chef K taught DON'T DO THESE.
    However, I don't buy Paremasan from the green bottle or even fancier in the deli section. I use Parmigiano Reggiano. I guarantee you will never buy any other parmesan cheese from the store again. The K brand is the worst in that bottle. I never knew about it until the chefs taught me at culinary school. Unbelievable. 18 months aged is the best, and you shred in with a manual shredder. Small using a micro planer which is so easy right into a bowl. In this UNSOLICITED suggestion Chef K, you will like using it.
    Got me an order over instacart from Costco rolling 18 thick ones because I have to feed the neighbor kids tonight. (I had to get a load of ice to cool down the swimming pool. Mighty hot these days- the pool is 97F!) They will love the pork and the asparagus. Every night I read American history to them or about laws and the Constitution. They were all born here. They like ice cream, too, so I will make your cobbler later today.
    Note: Biggest is your PATTY melt. I read to them from your books. About the wholesome but rough way cowboys lived. God Bless You, Chef, and Ms. Shannon!

    As always, outstanding cooking techniques, grilled, smoked, fried, BBQ'd, you always give us the great tasting cowboy food cooking and eating tradition experience, esp when it comes to pork chops, which you are exactly right. They must be thick and not over cooked.
    But I remember asking you if you would make Veal Chops one day. If you could please grill or fry us up some 2in thick veal chops, it would be great. I luv my veal chops on the medium rare side
