There is not much to transfer, it is a classic recipe and Italian people would kill me. ( as already many times here) + I don't like to do these things, there is plenty of videos on UA-cam already, I like to do new stuff

Temperature around 170 and the time could be different depending on many factors...is in until is cooked so you have to learn how to find out if the fish is cooked not any time.

Perhaps blend the potatoes with water and then strain the mixture.

I don’t remember. You don’t need to know. Every piece of fish and ove. is different. Learn how to find out if the fish is cooked, not the time.

I like the way you make your own sauces, instead of just recreating the old school classics. Nothing wrong with them, it just lacks creativity. Like a cover band playing a classic song it can be good, but not unique. Keep it up Chef
Yes for me are these sauces very boring and everybody does them. Plus they are very old school and in modern restaurant you dont see them that much. I am glad that you like my work :)
