Beetroot Purée Simple recipe & Beatiful aroma

RECIPE
Cut the root end and the stem of the washed beets.
Beetroots 880 g
Vegetable broth 200 g
Salt 2 g
Olive oil 15 g
Cover with a metal foil and pierce the foil a few times.Bake in the oven at 210℃ for two hours.
Peel the skin off. Keep the juice in the tray as we use it later.
Cut into small pieces. Wear gloves not to stain your hands with beets.
Cut beets 100 g
Beetroots juice 100 g
Salt 1-2 g
Olive oil 7 g
Use the rest of the beetroots for other dishes. Mix in the blender to get a smooth texture.

One tip,dont add olive oil in the blender ,puree it first and when its almost done add olive oil slowly.
The oil will emulsify with puree like in mayonnaise.
This way you won't have watery edges around puree.

I think you can keep 4-5 in the fridge, but in my restaurant, I'm preparing enough to use up in 2 days.

Hi, thanks for this video. Can I ask the community here, how come these videos or food blogs always produce insanely smooth shiny purees without the need to sieve or filter the purees? How do they get so nice and thick and spreadable without xanthan gum?

To make a smooth puree, first boil the vegetables with as little water(or broth) as possible until they are softer. And use a powerful blender.

@@cookerymethod4239 Thanks for the reply. I found out why not long after I posted my question. I wasn't blending it long enough and my blender then wasn't as powerful! All good now, produced some beautiful beetroot puree thanks to this video. Sending good vibes and thanks to you and your efforts in sharing!

Steam is better, to make it soft
Sorry for the late reply. I recommend roasting with water(or broth).It will be softer than roasting as it is.

Dude if you blend a little Xanthan Gum in with the puree to you stop the quid bleeding out away from the puree.
