Lemon & Coconut scones
500g self-raising flour
125g caster sugar
125g Margarine or butter
100g desiccated coconut
2 lemons juice & zest
100ml milk
1 egg (optional)
Method
STEP 1
Preheat the oven to 190c/ 170c fan oven/ gas mark 5
line a baking tray with greaseproof paper.
SETP 2
Add the flour and sugar into a mixing bowl add the Margarine or butter and rub in until it resembles fine crumbs add the coconut lemon zest and juice and mix briefly.
STEP 3
pour in the milk and lemon juice and bring the mixture together to form a dough
STEP 4
Turn out onto a floured surface and roll it out use a cutter to cut out your shapes
then place them on to your tray and bake for 18-20 minutes until golden brown and
transfer to a wire rack to cool.
