Lemon oat biscuits

Lemon oat biscuits
Ingredients
115g butter
115g brown sugar
170g plain flour
1 tsp bicarbonate of soda
2 tbsp milk
1 lemon zest & juice
170g rolled oats
Method
STEP 1
Preheat the oven to 150c/130c fan oven/300f/gas mark 2.
STEP 2
Line a baking tray with parchment paper.
STEP 3
Cream the butter and sugar together in a bowl then mix in the oats, flour, bicarbonate of soda, and then lemon zest & juice and mix thoroughly add the milk to form the dough if it does not come together add some more milk. turn out onto a floured surface, roll out the dough thinly, and cut into round biscuits using a cookie cutter.
STEP 4
Place onto your tray and bake for 20 minutes until golden then transfer to a wire rack to cool.
