  • LEARN HOW TO MAKE A VEGAN PANEER SAAG RECIPE WITH TOFU
LAY HO MA!! This recipe is so packed with flavour, you will absolutely want to cook this every single week! Saag refers to common leafy greens, so you can really make this with the greens available in your area like collard greens, chard, or even the greens from bok choy! Join me in this episode and learn how to make an easy vegan saag tofu recipe. Let's begin.
    Ingredients:
    150g fenugreek
    300g spinach
1 tsp pink salt + generous pinch
    300g extra firm tofu
    drizzle of olive oil
    1 onion
    1 small piece ginger
    1 tomato
    1 tsp cumin seeds
    1/2 tsp chili powder
    1 1/2 tsp garam masala
    1/4 tsp turmeric
    1 canned coconut milk
    Directions:
    1. In a large pot, bring 1.5 litres of water to boil
    2. Roughly chop the fenugreek and add them into the boiling water along with the spinach. Add a generous pinch of pink salt and boil for 2min
    3. Dry the tofu with a paper towel, then chop into bite sized cubes
    4. Transfer the greens to a food processor or blender. Puree the greens on medium low
    5. Heat up a sauté pan on medium high heat. Drizzle with olive oil
    6. Add in the tofu and sear them for about a minute on both sides, then set aside
    7. Thinly slice the onion and finely chop the ginger. Dice the tomato
    8. Heat the sauté pan on medium heat. Sauté the onions and ginger for a minute.
    9. Add the cumin seeds, chili powder, garam masala, turmeric, and the 1 tsp pink salt. Sauté for 2-3min
    10. Add the tomato and sauté for another minute. Then, add the pureed greens and coconut milk. Give it a good stir and bring to a boil
    11. When it comes to a boil, let it simmer on medium for 5min
    12. Add the tofu. Taste and adjust the seasoning if needed

Wil, I like your recipes a lot. I tried the ramen and noodle recipes and they were perfect. Since I'm Indian, I would give a few tips on this dish. First heat the oil and let the cumin splutter and then add in the onions. Cook the onions till they are almost brown. Then add in the tomatoes and spices. Let the tomatoes Cook with the spices until it's mushy then add in your green purée.

@@YEUNGMANCOOKING A small thing to add to this is: Garam masala is a spice that is already roasted, so its usually better to add it during the end of your cooking (Usually when the gravy has about 1/2 min of boiling left) :)

U know a staple masala mix for Indian curries is a ground paste of onion, garlic, ginder, chilli n tomatoes. As you r not thorough with Indian style of cooking so u will not be able to use them in order the way we do, so you could puree them together n use. Heat oil, splutter a dry red chilli n some cumin and then add the masala mix (the pureed onion-garlic-ginger-chilli-tomato) n sautee till oil oozes at the corners. It brings out the aroma. Then add the powdered masala - tumeric, chilli powder, cumin-coriander seed powder n saute half a minute. Then add the pureed greens n coconut milk n mix till a bit of grease appears on top or for 5 mins as u say. Add the fried tofu in n give it time to absorb the flavours. Season with salt as per taste n enjoy!!.

I made this saag recipe today. I used 1 pound of spinach (one container from Costco or the supermarket) as I couldn’t find fenugreek greens. Beet greens would also work as they taste a lot like spinach. I noticed in the photograph that it looked a bit soupy. So after briefly cooking the spinach and letting it cool down, I squeezed out most of the water before putting it into the blender. The saag turned out really good and creamy. I will make again. Saag is one of my favorite dishes at Indian buffet restaurants. Thanks for sharing, Wil!

Yum! And now I know what to do with the spinach and chard I just harvested .. a little too 'mature' & bitter for salad - but perfect for this!

That's lovely. We call it palak paneer in India, its served with generous amounts of ghee on top, served with naan or roti. Simply divine. I'll try this vegan version with coconut milk, looks interesting. 👍 keep cooking
