I’m so proud of myself… I did a thing! Living in Canada and eating healthy has become a severe struggle. For the past two weeks, I have successfully made homemade yogurt and cream cheese, for cents on the dollar. I also started making my own granola for less than half the price of buying it. I have not only proven to myself that I can eat a healthy nutritious breakfast every morning for $20 a month, including frozen fruit; but, I have convinced my seniors club to allow me to host a class for other seniors to eat well on a budget. You have been my number one inspiration, and lit the fire I needed under my butt to lift me out of my funk!!! I hope you don’t mind; but I plan to use some of your recipes to help seniors attain their own food security, and budget friendly strategies ❣️

I want to encourage people to ditch the mix. Processed mixtures are not homemade and even worse these foods are killing us. Make it real and fresh. Corn muffins are easy peasy! I love your voice it’s very folksy! 🥰
Thanks for this! I did some rough math and this is about half the price of the boxed mix in stores. It all adds up as my mother used to say. Also, did you know that three tbsp of regular mayonnaise equals one egg? I have used mayo countless times in cornbread when I am out of eggs and no one can tell the difference, plus the vinegar in the mayo activates the baking powder and helps it rise. Adding some red pepper flakes and parsley for Christmas!
@@TalesFromAnEmptyNest I don't know about vegan mayo but the reg works fine. The oil is there too so I just leave that out otherwise. I get the kind that is on sale bulk when I shop at the surplus food markets. I will make your cake breads and gravy mixes just add some powdered milk with some mayo if needed. Good to go and don't need to leave the house. Great to watch your channel. I've learned a lot.
I make my Jiffy cornbread with a little pure vanilla. Sometimes, I add some frozen corn 🌽. When I make a huge batch, I'll add frozen corn and a can of creamed corn. I let the mixture sit to rest in the bowl before putting in muffin tins or in a baking dish. It's moist and very delicious.

I've learned that if you want "old school cornbread" one box of Jiffy Mix fits perfectly in a small 6-inch Lodge cast iron skillet. I have a couple of well-seasoned 6-inchers that I only use only for small batches of Jiffy cornbread. I will have to try this recipe. I've used Jiffy mixes for years because they're cheap and simple. Recently, some stores near me have had them on sale for only 50 cents a box. It's rare to find anything under $1 these days. 😅
Thank you. You do know, I hope, that 2 Tblsp = 1/8 Cup, 4 T = 1/4 Cup, 8 T = 1/2 Cup. You do not have to measure out 8 Tablespoons--just use a 1/2 Cup measuring cup! AARGH!

@@nanasrainbow You can also buy polenta meal and put it in your blender/food processor to make it fine. All it is is coarse cornmeal. I buy polenta meal from Coles or Woollies.

I used to make a Jiffy Cornbread like mix. I thinks it was the Alber's corn bread recipie. I would mix it up by the 1.5 batches worth "cuase that was what I was mixing for the pan I was using at the time. I used repurpksed spaghetti jars for my food storage containers. For myself, I would drag out my ingredients, line up my jars, then add one ingredient at a time down the tow of jars until done. As I used each ingredient, I moved it from the unused ingredient grouping to the used ingredient grouping on the counter. I got to the point I could get everything out, get everything measured into the jars, get the lids on the jars then into the pantry, get the ingredients put away, and wipe the counter in a half hour. At the time, the home made mix was about half the cost of Jiffy mix. I did use less sugar than a Jiffy mix

I agree with your older recipe. I add 1/2 sugar one cup of milk but beat the sugar and 1/2 butter together alternating with dry and milk. Bake at 350 for 35 minutes. Very light and fluffy. Same 2eggs etc.

I've subbed in splenda for the sugar but it's been a while. You will need to increase the baking powder to get the same rise. Sugar IS a leavening ingredient
Might make this once I use up my large stash of Jiffy mix. I like to use it to make blueberry muffins. I'll also make a chili relleno casserole with this as the topping. Layer whole canned green chilies, shredded Monterey Jack, another layer of chilies and the cornbread batter. Easy and good.
Thank you! This is a sweet cornbread mix so I’ve never made this one without the sugar. I think leaving out the sugar might affect the way it bakes up. I might have to work on one that doesn’t have sugar in the near future🙂

I like the way you have it measured out. Knowing that I could vacuum seal it in a jar except for the baking powder which I can at the time of making it or should extend the shelf life. Edit: I made the equivalent of 1 box last night. It was OK though not a sweet as the Jiffy. I will try it again (as we have left over chili and add more sugar). Added 1 more tablespoon of sugar and it was like Jiffy. Thanks again.
I really like the jiffy corn muffin mix, but I don't buy because of all the other added ingredients. But it's cool that I could make it and have the mixture stocked. I'll see for myself if it taste similar when I make it and I'll post here. Thank you for the recipe!
Cornbread too dry? Crumble it into a bowl of beans, or use as a hot cereal with a little butter and milk. Also you can crumble it really well, add your milk and make pancakes. Yummmmmmy!

Jiffy Original contains lard and since we don’t eat meat I could never use it although they have a vegetarian version now but it’s so easy to make cornbread at home anyway. I use dairy so it works out for us.
Never tried the mix before but definitely going to try this! Homemade stuff always has the bonus of lack of random additional additives that we may not want to ingest, plus some self-customizable changes! I agree with you that I'd rather make a mix than buy the store brand with all the preservatives, so I'm really liking your videos. I loved to make corncakes using the recipe on the Jiffy box and top with baked beans but haven't for years because I won't buy the mix, but now I'll be able to go back to doing that after I make my own mix. Xylitol is an excellent sugar alternative. It can give you the poopies if you go too hard, but if you gradually introduce it into your diet, your pipes will adjust to it. 😏

Cut 2 in half and butter them up and put em in a bowl then cover them in soup beans, slice an onion and sit down and eat.

Have you done this with cup 4 cup GF flour?
I don’t do gluten free, so I have not. However, someone else commented that they did it with the 1:1 gluten free flour and it was great🙂
The thing we like about Jiffy is that it's not gritty corn meal? Is Quaker corn meal gritty?
I personally don’t notice a difference in the texture from this to regular jiffy, but that’s just my opinion😁

Edit: I made the equivalent of 1 box last night. It was OK though not a sweet as the Jiffy. I will try it again (as we have left over chili and add more sugar). Added 1 more tablespoon of sugar and it was like Jiffy. Thanks again.

I really like the jiffy corn muffin mix, but I don't buy because of all the other added ingredients. But it's cool that I could make it and have the mixture stocked. I'll see for myself if it taste similar when I make it and I'll post here. Thank you for the recipe!

Cornbread too dry? Crumble it into a bowl of beans, or use as a hot cereal with a little butter and milk.
Also you can crumble it really well, add your milk and make pancakes.

I’ve never used buttermilk in this. According to Google, yes, but some things may need to be adjusted.🙂

Jiffy Original contains lard and since we don’t eat meat I could never use it although they have a vegetarian version now but it’s so easy to make cornbread at home anyway. I use dairy so it works out for us.

Never tried the mix before but definitely going to try this! Homemade stuff always has the bonus of lack of random additional additives that we may not want to ingest, plus some self-customizable changes! My son misses Jiffy mix, he has to eat gluten free. I can do this with gf flour. Its best to weigh your flour when baking, its more accurate.
I weigh when I’m baking bread, but not always with things like this. You can use gluten free flour if you find a 1:1 swap🙂
I have not eaten Jiffy cornbread in a long time. I kind of stopped because of the price has changed. And you barely get much in them boxes anymore. Now it’s like 6:30 in the morning here in TX. I just made the mix and today I’m making some with my Sunday dinner. Thank you for another recipe. Will come back and let you know the results.

I agree with you that I'd rather make a mix than buy the store brand with all the preservatives, so I'm really liking your videos. I loved to make corncakes using the recipe on the Jiffy box and top with baked beans but haven't for years because I won't buy the mix, but now I'll be able to go back to doing that after I make my own mix. Xylitol is an excellent sugar alternative. It can give you the poopies if you go too hard, but if you gradually introduce it into your diet, your pipes will adjust to it. 😏
