POWDERED SUGAR:
1 cup granulated sugar
1 tbsp cornstarch
Put sugar and cornstarch into a blender and blend for about 30 seconds. Store in airtight container.
BROWN SUGAR:
2 cups granulated sugar
2 tbsp molasses
Put sugar and molasses in a bowl. Mix until all of the molasses is coating the sugar. I use my hand (clean hand please) at the end just to make sure there are no lumps of molasses. Store in airtight container.
BUTTER:
2 cups heavy whipping cream
1/4 tsp salt
Put heavy cream into the bowl of your stand mixer. Attach the whisk attachment. Slowly increase the speed until it is at the highest speed. It will turn to whipped cream and then it will start to separate. Once you see liquid, cover the mixer with a towel to keep the liquid from slinging all over the kitchen. Let it continue to mix until the liquid is separated from the butter. Before you remove the butter from bowl, go ahead and get 3 bowls ready with ice water. Using a fine strainer, drain off the buttermilk. (If you have cheese cloth, wrap the butter and gently squeeze the remaining buttermilk out.) You can use this in any recipe you wish. Take the butter and place it in the first bowl. Gently squeeze the butter to get any remaining buttermilk out of it. Once the water is cloudy, move on to the next bowl, and then the last. Place the butter onto paper towels and get the water off. Place in a clean bowl and add the salt. You could also add other seasonings such as garlic, rosemary, etc if you want a flavored butter. I store mine in a glass dish, You could also just shape and wrap in parchment paper.

When I make vanilla, I make it in 2 quart jars. I use the 1st quart jar until it's about 1/3 gone, then I refill it with spiced rum, or vodka. I put that quart behind the 2nd quart jar, and start using vanilla from the 2nd quart jar. Every couple of years, I add more vanilla beans to each quart, but leave the original beans in there. I never have to start vanilla from scratch, and have been able to give my grown kids vanilla, as gifts!

Please remember not to toss out the vanilla pods. Once you decant your finished extract, just refill the jars with your favorite alcohol. I'm on batch 5 with my current pods. They seem to last forever this way.

I make all of these and only buy white sugar in bulk so I can have all I need on hand. We have dairy cows and make a lot of butter and cheese. The liquid from making butter is not a true buttermilk rather a butter whey. A true buttermilk requires a culture to make it. I make it all the time as I use it in making my cheeses along with yogurt.

Last time I made a batch of vanilla extract, I used the dark spiced Captain Morgan rum. Oooooh was it good. Granted, you really can't follow the darkening process but, the taste when it was finished was worth it.🤤
I currently have a pint of regular Smirnoff vodka with fresh mint from my garden. Never done the mint before so, I'm looking forward to see what it will turn into. I regularly make hazelnut extract, since I love that in my coffee. I have however for about a year now, added one vanilla bean stick to the jar. Tastes great in my coffee and when I use it to bake with.

(I have to label things though; have no expectation that in a few months I'll recall what that powdered sugar actually is). I don't drink alcohol, not a teetotaller, it just makes me feel off and I feel no judgement at other shoppers; but I can so relate to your alcohol buying story. No one else cares. Just me if I go into buy alcohol, but I get embarrassed or weird about it. I'd much rather brew it for myself at home somehow. Now there's an idea... when lockdown happened I flirted with the idea of producing some, (difficult as it was to buy at the time) for sterilizing purposes...

I quit buying brown sugar. It would go hard before I used it. I put sugar in a sandwich bag and add molasses then seal and start mixing. Made homemade butter with 42 preschoolers for Thanksgiving feast.

I learned how to make vanilla from an Amish friend. She was telling me how easy it was. I was really stressing, because my family history had made me almost phobic of alcohol. Finally she said I'll buy you a bottle and you can pay me back. I burst out laughing and told her no, I can do it. I absolutely was NOT going to let a sweet, little, Amish, great-grandmother go in a liquor store for me! It's still hard, every time, but good vanilla is expensive!

It’s crazy to think about how little sense it makes making your own butter price wise today. Unless you get raw milk from a local farm or have your own cow in the back yard 😁. Ensure the butter is dry. Been making my own butter for many years but was in a hurry and didn't squeeze enough a while back. Got mold a few days later in the fridge. First time in 20 years. Also, if no cheesecloth, use the baby burping muslins if you have. Thank you for this video. Will try spiced rum!
