    And you need a premium fish sauce like red boat as cheap fish sauces are salty and nasty

      Not necessarily. The saltiness is actually really good and extracts the moisture from the veg. Some are bad tasting though

      They’re all salty. Red boat is like first press premium extra virgin olive oil but other brands will be just fine. Thats why you mix with sugar, water, lime to balance the saltiness. I’m Vietnamese. Great recipe but I would add fried shallots too. Course we would add other herbs most folks aren’t familiar with

      @@LT-pp1je I don't disagree but some of them seem to be very much saltier and way more pungent so I assume overpressed, the last press or multi pressed to squeeze the very last from the brine

    Is the kaffir leaves necessary? I can’t find any.

      You don’t have to use them. You can use some lime zest instead

      You could just use lime juice, sugar, fish sauce no need to cook it like this.

    Why boil the chicken instead of frying in a pan ?

      The dressing soaks into the chicken from doing it this way. It’s way better than frying especially for a recipe like this

      as a vietnamese person boiling the chicken is more traditional than frying! (i’ve actually never seen my mom fry chicken in a pan for vietnamese dishes) it’s also a lot healthier :]

      @@enooki oh it definitely is healthier, but you get less flavor from the chicken alone. Not talking about any sauces or dressings.
