    500g (1.1lbs) - Chicken Breast
    1 - Large Carrot, Washed & Julienned
    100g (2.8oz) - White Cabbage, Chiffonade
    100g (2.8oz) - Red Cabbage, Chiffonade
    1 - White Onion, Thinly Sliced (Substitute For Red Onion)
    100g (2.8oz) - Bean Sprouts (Mung Beans)
    1/2 Cup (125ml) - Rice Wine Vinegar (Substitute For White Vinegar)
    1 1/2 Tbsp (30g) - Caster Sugar
    1 tsp (5g) - Sea Salt Flakes
    15g (0.5oz) - Coriander (Cilantro), Lightly Torn
    15g (0.5oz) - Mint Leaves, Lightly Torn
    40g (1.4oz) - Peanuts, Roughly Chopped & Roasted
    Fried Shallots To Serve
    Birdseye Chilli To Serve
    Lime To Serve
    Vietnamese Dressing -
    2 1/2 Tbsp (50ml) - Fish Sauce
    1/4 Cup (60ml) - Water
    2 1/2 Tbsp (47g) - Caster Sugar
    1 - Garlic Clove, Crushed
    1/2 - Whole Lime

    I like this better than the version I have been making. I always come away from your videos thinking what I can do better overall not only for that recipe but for other dishes I will make as well.
    I never thought to poach the chicken, I always roasted it, I have a lot of lemongrass so might try adding that into the poaching process as an experiement.
    I never thought to try and pickle some of the ingredients either, which is dumb when I think of it, so much more flavour.
    I like Vietnamese Mint and Thai Basil in this as well. Which if anyone does not like Coriander you can use those instead.

    I was raised eating chicken salad. A staple in the south in the States. Your recipe is quite different than Georgia’ “southern chicken salad” but it looks delicious. Can’t wait to make this and see how it compares to my grandma’s version. Oh and by the way: damn, your knife skills are epic!

      Yeah chicken breast is terrible, Vietnamese ck salad is the only good way to eat it , it's actually really delicious like this , the veges answer sauce really compliments the dryness of the chicken. .

      If the chicken breast is cooked right it’s actually delicious. Too many recipes online suggest cooking it for way too long. In this recipe the chicken isn’t dry at all 😊

    Whats the difference between poaching the chicken and cooking it in a pan or oven?
    Ive never poached chicken in water before, so if its supposed to absorb flavour much more, why do we not all cook it this way more often, is there a downside to it?

    What do you think of subbing sugar for honey and adding a bit of oil. I like the spicy touch though.

      Glad you think so! Personally I will say no but that’s not stopping you from doing it if you’d like to do that. The sugar is what makes this dish pop in flavour and it works really well with the quick pickles. If you are to sub the sugar for honey I wouldn’t recommend adding oil aswell as it’s not needed 😊😊

      The sugar is needed to obtain the full flavour. You can add less but it definitely won’t taste as good. Treat yourself 😉

      I'm thinking Worcestershire would be too salty, but I was wondering if oyster sauce would be a good substitute.

      Glad you enjoyed it. Worcestershire sauce and oyster sauce will ruin this dish. unfortunately you need that fish sauce to make this dish at its full potential.

      This is a Vietnamese salad. No oil is needed or added. There’s so much flavour from everything else.

      I wouldn’t recommend it as sweetener is artificial in most cases and will change the flavour drastically.

    No, no, no, do not poach chicken in boiling water. It should be max 90 C, preferably 75-80 C otherwise it goes dry.

    I understand you’re trying to use the algorithm for promotion but I really dislike the way you have turned with titling videos. It doesn’t help for searching, it hinders it. If I’m looking for a recipe my focus is on the dish I’m making, not whether you think I need to know it or if you make it every week. I know this is something Ethan Chleboweski does all the time and it has turned me away from his videos. It’s a recipe. Tell me what you’re making.

      Hey Kyle, I appreciate your feedback. To be completely honest with you, if I post this video with the title “Vietnamese chicken salad” from past experiences this video will get no traction whatsoever and I’ll lose out on time, effort and any sort of income. At the end of the day this is my job and I need to pay my bills. Like any job in life, without customers nobody is getting paid and that’s the same process for UA-cam content creators that do this for a living.
      I’m saying that, I will see what I can do to make it work and make it easier for you to search up such recipes. I personally don’t want my time and effort going to waste as what may be a 6 minute, free video for you, took me 3 full days to film, direct, edit and produce. I hope this doesn’t come off rude or anything as that’s not the type of person I am. I sometimes think things aren’t fully understood. Hope you have a great week, Kyle 😊🙏

      @@ChefJackOvens Hi Jack, I appreciate the reply and I wanna apologise fist off as I know the tone of my writing there wasn’t my best. Like you I don’t like feeling like I’ve been rude and really I was a bit rude there.
      I of course also understand you have to do what you have to do to get engagement, and the algorithm favours certain things, and at the end of the day this is your source of income. I do stand by my point that I think you can make it clearer what’s being made while still utilising the best tools at your disposal to promote engagement. I can only speak to my own habits but for me not knowing what’s being made beyond a very minimal description turns me away from watching in the first instance. But not everyone is the same.
