You're braver than I am. I make my duxelles in the food processor to chop the mushrooms finely and I buy premade puff pastry for the beef wellington; I don't make it often because it's a fiddly thing to make, even with the shortcuts I use. I learned how to make it by watching Gordon Ramsay. Whoever you were watching forgot the mustard. I always use my favourite mustard, Keen's mustard. I'm glad that yours was a success, Kay. Incredibly bold of you to try this recipe Kay. This and rack of Lamb seem to great a challenge for me. The most complex thing i ever cook is the occasion Chicken Parmesan. For you pie crust though, always best to work with cold ingredients. Your mixing bowl, your flour, your butter/lard(dice and chill) your water(chilled with ice) should all be cold/chilled. Even once all the pie crust ingredients are assembled allow the dough to chill some twenty minutes before rolling it out. This helps to keep the granules of lard/butter whole which lends to a flakier crust. Thank you for sharing this challenging recipe.

Make sure your pan is pretty hot , and sear the whole bit on ALL sides , QUICKLY ! Like give it a SCARE , so it closes on all sides ( leaving all the meaty juices inside ) . The shape of the beef has to be kind of like a rectangular block like . Like a parcel . You can tell your butchers , you're planning to make beef Wellington . He'll give you the right cut ( s ) ! I’m gonna be honest, I watch August and other reaction videos to be entertained by your horrendous cooking and laugh about it, but I’ll never laugh about you as a human being because by posting these videos you have already proven yourself a braver individual than myself, and what’s more, your endearing demeanour, I can only respect that.
That beef wellington looked proper nice. I have only had it once when my wife decided to cook it for my mother in law who was visiting. It was disgusting, so we all went for a fish supper and that was disgusting as well, probably because it was a Sunday. The fish was all dry and that lot. Fumbs up.
