How to Make Peach Jam

    This jam is made with peaches, nectarines, cooking apples and lemons. The peaches and nectarines are low in pectin, which is why the lemons and apples are included in the recipe. The predominant flavour in the finished jam is of peaches.
    With this method the fruit is cooked to make a pulp, and the amount of sugar is calculated by measuring the number of pints of cooked fruit pulp. Add 12 ounces of sugar per pint. If the jam seems slightly on the sweet side, add some Amaretto liqueur before potting it up.
