Introduction
Chicken À La Kiev or Chicken Kiev is a breast of chicken stuffed with butter, garlic, and parsley, rolled, breaded, and either fried or baked. In this recipe, the chicken breast is filled with herbed butter, with the edges of the breast pressed tightly so that the butter doesn't dribble out while cooking. The chicken breast is then, rolled in refined flour, dipped in beaten egg mixture, breaded, and frozen for about 30 minutes before deep frying. Preparation of the Filling
1/4 cup Butter
1/4 cup Parsley Leaves (chopped)
2 tbsp Garlic (crushed)
Salt (as required)
Black Pepper (as required)
Stuffing the Chicken
2 Chicken Breasts
For Mashed Potatoes
2 tbsp Butter
1/2 cup Potatoes (boiled, peeled & mashed)
2 tbsp Fresh Cream
Salt (as required)
Black Pepper (as required)
For the Veggies
1 cup Blanched Vegetables (french beans & carrots)
Salt (as required)
Black Pepper (as required)
Before Frying
2 Eggs (beaten)
Salt (as required)
Black Pepper (as required)
Refined Flour (for dusting)
Bread Crumbs (for coating)
For Frying
Oil

I used to buy this at my local grocery like walmart but they dont sell frozen chicken a la kiev anymore 😢
Won’t the roulades open up? Or did you seal them with something? I was thinking of maybe using a toothpick from keeping them to roll open
I think this is why he puts the chicken in the freezer, twice. This will cause the roulade to stiffen and stay firm.

The last step... frying for 3 min.. What temperature should the oil be at? Can one coat the crumbed roulades well with butter/oil and then bake it in an oven at 350deg F or 210deg F both sides for 3 to 5 minutes? Could one 'Indianise' it by using chopped coriander instead of parsley?

I do fry my «poulet à la Kyiv» in a pan with butter and then end the cooking in a 160°C oven for 20 mins.
About coriander sur why not :)

It's chicken kyiv.the famous recipe of Ukraine.
Despite the name, there is nothing Ukrainian about the dish. 😅
It was invented in St Petersburg by a French chef for the Russian nobilities. We can stop with the cringy Kyiv reference. 😅
There are like 5 potential origins of this dish, non of them seem to be documented as the real one. As for "nothing Ukrainian": Kyiv, the capital of Ukraine in the name of the dish is Ukrainian, so it should be transliterated from Ukrainian, not russian.
@@olgatrotsenko2153 Ancient chronicles of the Rus' have always been written KIEV, not the cringy Kyiv. Also, Kyiv sounds and looks so unnatural in English tbh, that's why I cringe every time. Do Germans protest when it's Munich instead of München? 😅
@@darkmatter5424 the languages evolve and the capital of Ukraine is called "Київ" in Ukrainian for longer time than Rus' existed and should be transliterated to "Kyiv" in English. If you find it cringy it's your personal problem.
