    You should take those skins and put them into the dehydrator and make tomato powder from them.

      I like the idea of using up everything, but in this case, I'm pretty sure all the flavor will have been cooked out of those skins. She didn't just blanch and peel them, she cooked them in there for awhile.

    I did 9 pints of the stewed tomatoes for the first time. Plus I put the tomato skins in the dehydrator. So excited. Thank you. All the tomatoes were from our garden and a friend gave me yellow , red, and orange bell peppers. So excited to use these. I'm so grateful to have good food in my pantry. Specially when I am so busy. I get so burnt out around 3 after helping my kids school day. Prepping to cook is the last thing I want to do. Thank for inspiring me to get ahead.

    OMG thank you so much your the only person I found that canned tomatoes sauce with vegetables this is the first time of me doing it and I didn't want to add acid or lemon juice so thank you so much.

    Linda is so right. You wouldn't build pressure if it wasn't sealed regardless of whether the lid looks perfectly level.

    Thanks Linda I love your canning vids they are such an inspiration. I got an electric canner because I was growing all kinds of stuff and I wanted to do it the honor of preserving it if I couldn't eat it immediately. Its great for a single girl though because I also buy big lots of fresh veggies from Sam's and put it up so it doesn't go to waste. Canning is a super life skill.

    I remember your chickens loved those skins. I never thought about adding onions, peppers, etc to my canned tomatoes. I’m going to try this! TFS!

    I just can't up 28 pints of diced Roma tomatoes with Anaheim Chiles and onions and they're delicious! And then a coworker just gave me a big box of red tomatoes from his brothers Garden so I'm going to do stewed tomatoes this weekend can't wait!

    Use it in your Aroz con pollo. Cook bone in chicken in a deep sauce pan, remove chicke, set aside, fry 2c rice in the leftover chicken grease, when brown add the stewed tomatoes, 4-5c chicken broth, seasoning add chicken back in, cover and simmer until the rice is fully cooked.

    Love, love your canning videos. I just pressure canned 21 pints of tomato sauce & didn’t add lemon juice or citric acid to my jars. So happy to see you didn’t either.

    Stewed tomatoes with all that extra flavor ~ Yum! I finally ordered the 12 QT Cuisinart Pot that you use. Amazon came down on their price $45 now. Not sure if you had a link at one time but it's not on this drop down section. Thanks again for your uplifting personality. ~ K

    I tried canning Roma tomatoes with a few beefsteak and cherry tomatoes this year into a spaghetti sauce with no luck. I could not get the acid taste out. I added sugar slowly and finally it was too sugary but still had an acid taste. Used about 8 1lb bags of frozen tomatoes, green peppers from our garden and store bought onions. We could not eat the sauce, so it was a big fail! Everyone told me that tomatoes was easy, but tomatoes are the only thing that we have not had any success with canning. Used the recipe from the Guide to Home Canning from USDA, so I don't know what went wrong.

    Hi Linda. Is the smaller All American canner Model 915? I have that model for canning 7 qts, but I don't think I can stack pints in it. Really like my All American and the lid seals fine, as long as I run oil, according to directions. Thank you for this recipe. I prefer those roasted skinned red peppers. Sounds delicious! There are so many items I want to try in the canner. I now save my water bath for bread & butter pickles with honey. Keep sharing these canning videos :-). They are much appreciated! How about using these tomatoes in a Mediterranean fish stew!

    Those are the best looking tomatoes!! I never find nice red tomatoes.. Do you let them sit on the counter several days before doing this? They look so yum!!

    I love this recipe for tomatoes. I am trying to learn as much as possible before I try to can for the first time. I noticed that you didn't debubble the jars before putting the lids on. Does it really matter?

      I had the same thought. Many other canning videos stress the debubbling. Your recipe looks great.

    Hi Linda, I’ve been thinking about this for a while now, I think lemon taste terrible in tomatoes but lime juice is fantastic with tomatoes and it has the same acidity as lemon so that’s what I’m going to use when I need to. What’s your take on it? You look fantastic, life is agreeing with you.

    As a kid I always helped mom do the canning. Your recipe is similar to hers. Canning is becoming a lost art I am afraid. The younger folks don't seem interested, some are, but it is hard to get them away from their smart phones.

      That's why I'm so grateful for Linda's channel and other like minded channels that have taught me how to "Safely" pressure and water bath can. My mother water bath canned stewed tomatoes every September but that was her thing and nobody got in her way. I wish I could have known about food preservation in my younger years rather than retirement age. Better late than never I suppose.

    I make a dish very similar to this, but add summer & zucchini squash or fresh green beans. Can I pressure can this? Possibly adding citrus power?

    Where the recipe to make what you can? I am just learning how to can, & some of your recipes you share on your video. I looked below, & can't find it. I love slantro. I made some jam in my bread maker. I have a pressure cooker, & when I can that's what I will use.

    Thank you for making a video with a alternative option instead of adding lemon juice or citrus acid or vinegar which all change the flavor with tomatoes. THANK YOU SOOOOOO MUCH! Do you have a great salsa canning video that dosent include vinegar, lemon or lime juice or citrus acid? If not will you make one pretty please?

    How long is the shelf life of canned tomatoes? I canned salsa but they have been sitting in my cabinet for a LONG time.. I keep thinking I should throw them out but then I am thinking.. how many months or even years can you leave them? I think they are way past the point of no return but dang they still look so good in the jar.. Any suggestions?

      You can Can Tomatoes in a Water Bath Canner!!

      It has to much low acid foods to be safe to water bath can , when you add the other veggies it needs to be pressure canned . If you had just tomatoes then that’s safe to water bath can and this information is what I found in my ball canning book

( kinda backwards I know) I was wondering if I could water-bath or steam bath these but after your comment I understand and will be pressure cooking. I did steam bath my salsa and bruschetta? And they had peppers and onions in them?

    I have a canning question. Why don't we just cook the tomatoes up then pot them in jars and that's it. Wow do we have to cook the jars in water?

    Linda, what makes the jars evacuate. When I did my green beans last weekend, all of my jars lost fluid. 1 jar actually lost half of it's water. I have tried filling a smidge more than needed, and can't get it right. Help!
