      Headspace on tomatoes is 1/2 inch from the top of the jar.

      @shelly on the pineTreeHill. I would can the one that she left with extra head space, but I would leave it out and use it first.

      That's why you should have The Ball book of canning or The USDA guide of canning. It gives you ALL the information you will need to can anything!

    When I process tomatoes, I core them, cut them in fourths and cook them till soft. I then run them through the purée attachment on my kitchenmaid mixer and usually simmer the purée till desired thickness before canning. That way my purée can be used for whatever I’m cooking, like spaghetti or chili. It’s fast and efficient!

      I do it this way to. But I after cooking, I run them through my victorio food mill to remove skins and seeds. I don’t like the seeds in them

      I ALWAYS take skin of when I use tomatoes no matter the follow up
      Makes it a whole lot nicer to eat and avoid a lot of pesticides etc.
      I always take out the seediest too , phytic acid in them, gone what’s left is the pure flesh

    My Mom made tomatoes just like that. When serving them, she would cream them. I thing she added milk to thicken them. As af kid, I loved them. They were so good and sweet. Yum

    This is pretty much how I was taught to can tomatoes. So good in winter. Okra, tomato, onion, ham soup is a family favorite.

    That was funny seeing Mr Danny's facial expression when you said that's the reason you can't can in your new canning kitchen. He looked like the cat that ate the canary. Lolol
    Btw... I love to slice tomatoes and add a tiny bit of salt in them to get those juice flowing so I can pour their juice on top of my beans and cornbread or most anything in eating. I love putting in stewed tomatoes on top too. Like you said before, it's a southern thang I guess.
    It's the best!!
    I forgot to say that I'm stewing tomatoes to can this week and making Salsa Verde also. I just finished up Salsa and Pasta Sauce.

    I had never eaten Stewed Tomatoes like you made them, until I moved to Ohio in 1972. I love them.😋
    My Grandma and Mom always made Sweet Stewed Tomatoes. They added sugar, butter and torn up slices of bread. They also omitted the Bread and served the Stewed Tomatoes on biscuits. I do love these. Of course they didn't can these, they used their plain canned Tomatoes for the recipe. 😋😋
    I love Okra, Corn, and tomatoes. I did can these.😋😋 Another is Tomatoes and Zucchini with your favorite pasta sauce seasoning when canning. I use to buy these canned in the grocery store in Atlanta. So I took that idea and canned my own here in Ohio 😋

    My garden isn't big enough to can frequently, so I throw tomatoes in the freezer. When I pull the bag out and let the tomatoes thaw, they lose a lot of their water so I don't have to boil them down for so long, and the tomato water is delicious. I look forward to it every year.

    I love your canning recipes Wanda. I made your refrigerator pickles last August and honestly they were still crunchy yesterday near a year later! I ate them out of half gallon jars all year. I'm sure they're not supposed to keep for that long but they did in the vinegar, sugar spices juice. Then I put some beets in that same juice after the pickles were gone. Tasted great. Lasts a long time. 😊

    We LOVE stewed tomatoes - We do it open kettle with lemon juice, salt, pepper and a bit of sugar (if needed). We can it in jars and opening up a jar on a hot summer day with a salmon sandwich, yum!!

    Such a lovely video Wanda. You are such a good teacher. I do mine the same, some with peppers, onions, and garlic, some just onions and some plain. I just found an easy hack for my tomato juice that I never thought of before. Add my Amish Paste Tomatoes to my juicer, it separates my seeds and skins making it so much easier. I never thought of that before.

      I did use the kitchen yesterday to water bath my peaches. Danny had to MOVE over.

    Since I’m on a low sodium diet, We don’t add salt. Also, since we have diverticulosis, we cut the tops and bad spots out, par boil snd then run them through an attachment on my meat grinder that removes the seeds and skins. Sometimes, we just manually remove skins after par boiling and leave the seeds. They don’t bother us so much.

    Thank you Wanda! I'm thinking about fall crop of tomatoes. Have you ever had any luck with that? Also I'm thinking about dehydrating some of my figs. Noticed you had a video on that. Wondering how they turned out and if you would do it again? I'm thinking you could use them for baking? Again, thanks for the tomato processing video.

      The figs were hard. I dehydrated them until they were totally dry. But they rehydrated good and I made fig newtons from them. But I have a freeze dryer now and I love them from the freeze dryer. Just trying to figure out storage in our humid conditions.

    some canning videos say that you have to pressure can them if you put onions and peppers in the tomatoes, is it safe to just water bath them? I have never put anything in them and I water bath them, but was considering onions and peppers, now I am confused to water bath or pressure can???

    So it's okay to use a variety of tomatoes when canning? That was what I was trying to find out. I'm scared to death of doing tomatoes because of Botulism so I have done any in over 35 years but I'm going to try it out again.

      I mix the tomato varieties for the stewed tomatoes. You can keep them separate if you want.

    I followed this and realized I didn't debubble, but don't recall you doing it either, is it necessary for these? Are they safe to eat?

      Yes, they should be fine. I bump the jars to settle the content. Debubble is when you bring air to the top. Now they have a stick to stir the content.

    If adding peppers and onions do you cook them with tomatoes or just add raw?

      I would cook the peppers and onions before adding the tomatoes. But I do can a salsa that has the peppers and onions already in it.

      I was a little confused about what she meant by plain lids also. Did she mean that they were just not Ball lids?

      No I don't blanche them. I did remove the cores. But these type tomatoes have very small core

    What's the difference between stewed tomatoes and just canned tomatoes?

      Most canned tomatoes are whole tomatoes or chunks of tomatoes. I cooked these down to a near puree.
