Canning Hamburger & Hot Dog Relish With Linda's Pantry

  • So today I am sharing a video on how I canned up hamburger & hot dog relish that is delicious.
    Here the recipe that I doubled
    12 cups zucchini
    one green bell
    2 red bell pepper
    4 cups onion
    1 whole Jalapeno
    1/3 cup canning salt
    1 table spoon of each
    Dill
    4 tbls horseradish
    2 1/2 cups sugar
    nutmeg
    turmeric
    2 1/2 cups vinegar

    I’ve been canning zucchini relish for around 40 years and an not tired of it yet. We use it for meat loaf and chopped meat sandwich spreads as well as burgers.

    I made the hamburger & hot dog relish early last summer, before you did the newest video. In all honesty, I tasted it before canning and I didn't like it, then I tasted it a couple weeks after canning it and still didn't like it. I was going to toss but got involved with another, different project. Then today my partner and I had decided what to get rid of that we didn't like and there was your relish. Neither one of us like throwing out food, so we decided to taste it first, and WOW!!! It was delicious. It isn't crunchy, probably due to our high elevation, and had a very elusive kind of taste, probably the turmeric. We don't eat horseradish so it wasn't that. We're having it with our dinner tonight. I'm so glad I never tossed it...lesson learned about the flavours of canned food too close to the canning process. Again, it is DELICIOUS. Thank you for your time to do the video.

    I 've just put 7 jars in the canner and oh my gosh it is superb. So tasty and I'm a relative newbie to canning from Australia. I used 2 cups of sugar, not 2.5 and I thought it was plenty. I have the canning bug 😁

    The best relish ever! I never buy relish again! Omgosh, who would of thought Zucchini! I have to make a huge amount to always have this on hand! Try using this on grilled sandwiches, delicious!!!

    So I was gonna freeze my zucchini until I saw this video! I only had to buy horseradish and now I have 11and a half pints of the best relish I’ve ever had! It’s delicious!! Thanks for the recipe!!😘

    Loved the video... The sound of the canner in the background Therapeutic!!! Just a thought though you "can " Dehydrate your pepper seeds at the lowest temp and save money on purchasing seed next year!!! Good job... Just purchased the Tupperware gadget for chopping...

    That's the same sugar to vinegar I use for my relishes. Equal parts by volume of each. It gives a perfect flavor.

    Good morning Linda! Great video, I have already made relish 1 time this season. a week ago. That looks great, I am going to have lots of zucchini. We don't eat a lot of meat to use on hamburger and hot dogs, but we eat a lot of rice dishes, or potatoes and the relish is excellent.

    I hear ya Linda.. I only break out the heavy Cuisine Art food processor to make humus. All veggie chopping is done manually! clean up seems much simpler too! I use the Ultra Chef Express - awesome tool.

    Wow I just love your recipe & I am currently making it- just a smaller version- Can I tell you something my absolute favourite & most loved singer is Dolly Parton & sometimes when you are talking I could swear that is who is speaking - love your accent.     Half Batch Recipe from your video: Zesty Zucchini Relish
    12 cups finely chopped zucchini
    4 cups finely chopped onions
    2 red bell pepper chopped
    1 green bell pepper chopped
    1/3 cup canning salt
    2 1/2 cups sugar
    2 1/2 cups white vinegar
    1 tbsp nutmeg
    1 tbsp ground turmeric
    4 tbsp horseradish
    1 diced chilli pepper

    I have made this recipe several times but I add two more jalapenos to give it a kick. Everyone that has tried this loves it, even my sister and her daughter. This year, most of the jars went to our cowboy friends from Utah. The squash bugs destroyed my zucchini plants so I wasn't able to make another batch.

    Turmeric has never stained my old school Tupperware measuring spoons. I have one gray set from the mid-90s and two white sets after the redesign in the late 90s/early 2000s. They’re still the same color they’ve always been. My only complaint is the paint on one of the white sets has worn away over time. Good thing the sizes are embossed on the reverse side of the spoons.

    About Vinegar... I strongly recommend have as much of it on hand at all times as you can.

    I use zucchini relish to make sloppy joes. Brown meat, add lots of relish and your favorite ketchup. Yum , but I don’t put dill, jalapeños or horseradish in mine.

    Looks amazing💞🥰.. but I'm a little confused, do you drain that salt water after the time in the fridge? Otherwise what is the point of salting or is that for extra liquid in the recipe. Thanks marie from 🇨🇦

    Good afternoon Linda, I've place the first 6 ingredients into a bowl to put in the fridge overnight. Now for the next day, my question is; do we leave all that juice in there or do we remove it ?

      You drain it out then rinse according to other recipes. However I have seen a couple who just drain it out well and add brine ingredients to the pot. Other recipes have brine made seperate.

    I did zucchini relish, it had more onion, 6 peppers and lots of sugar. I ground 48 cups. I made 4 batches. Did you drain the zucchini and rinse with water? I did with mine.

    Hi just found you because I like making chutneys and pickles. I do a mean pickled hot onion. The spices I use have extra chillies. I will try this but in a smaller batch first.

    This looks great, and what a super idea to use up that zucchini. I'm always looking for ways to use it all. I have the same thatsa bowls. Love them. I still have my big food processor, but I find I use these Tupperware power chefs all the time. May be time to get rid of the big processor lol.

      I checked her vid from 9 years ago (back when she was still using a food processer) and she didn't rinse, just squeezed it through a colander.

    I have a counter full of zucchini. Looking for a mustard hot dog relish recipe. Figuring how to change this recipe into mustard relish. I will have to search your channel to see if you make the mustard type. Or maybe I just gave you an idea (hint hint, LOL) My mom used to make zucchini sweet relish years and years ago. It has good memories.

    Thank you for the great instructions! 2 questions: 1 -can I cut way back on the sugar or omit it completely? don’t like sweet relish, prefer a more savory, dilly type relish.
    2- i can’t find anything other than the “ prepared horseradish, it looks mayonnaisey.... could I use it?

    Looks yummy. At 21:39 you said 2/3 cup canning salt, but the recipe says 1/3 cup. ??? Oh I see, later you explained you doubled the recipe.
