  • Y’all, I found okra!
    I really have a difficult time finding or growing okra here in the high desert, so I was very happy to be able to find some to order through our local organic grocery. It’s not great, but, hey! I found okra!

    Hi Vickie, I just finished making a favorite of mine, since childhood. Tomato, okra and corn soup. My Mom was born in Alabama, so she always cooked southern style dishes.
    The weather here in Maryland gets very hot in the summer, with very warm nights, which okra loves. She always grew tons of it. Canned plenty for the rest of the year.
    This was a favorite When temps cooled off and soups were a welcome meal. She would do just as you did to prepare your okra for canning, but she would saute a large onion first in some bacon grease. I use half olive oil and half bacon grease. Cook the tomatoes as you did, until nice and tender. Add the cut okra and cook for about 15 min. Not to overcook it. Then added the steamed corn cut from the cob and just simmer for another maybe 5 minutes. Check for seasoning. Maybe a spoon of sugar if the tomatoes were on the tart side. I add some red pepper flake to the tomatoes as they simmer for an additional kick. Sometimes she would add rice. Very versatile as you said.
    She would add curry to it and have a terrific vegetable curry, over rice. Maybe with some carrot, raisin salad on the side.

    THANK YOU FOR THIS CANNING VIDEO! Also, I have a made-up recipe that I add either a can of drained whole kernel corn or cut off fresh corn from the cob to my okra and tomatoes skillet, sauted onion, garlic or garlic powder, black pepper, and before serving, add a few slices of cheese to melt on top. YUM! We live in Arkansas and usually okra abounds! Nancy Moore

    I just consulted my Ballbook. I see a recipe for Pickled Okra with Cherry tomatoes and Pearl Onions. I wish there was a picture. Okra and Tomatoes.....a beautiful sight!

    In the South, people coat their chopped okra in corn meal and fry in a cast iron skillet, stirring frequently till crispy and tender. Some soft fry it to their preference. Others make a batter and coat their okra and deep fry. Any way you cook it, it is good! also, some save little pods and boil them till tender in a stew pan. They are good whole with salt.     Growing up my Mom mixed onion,okra, green tomatoes and ripe tomatoes and breaded it in flour ,she fried it in a cast iron skillet, awe so good, so today that is my favorite way to eat okra. You don’t see very many recipes for okra ,thanks for sharing.

    What a Blessing! A whole box of okra. I love every one of your recipes & can smell the wonderful aromas from here. Tomatoes and okra is so delicious & you're so right, not slimy at all.     My mother use to can gallon jarrs orka tomatoes corn with a piece of beef in a large pot with a towel on the bottom for 40 minutes and we ate it in the winter. I thank God it did not make us sick. I enjoyed your videos

    This year my okra is not producing either and I live in the south. The weather is great and the plants are huge but they don’t produce much this year. This is a great way to utilize a smaller quantity. Serve over rice and it’s so yummy! Thank you for sharing.
    Also, if you leave okra out in the sun for a day or so, or on the counter top for 2-3 days it will adsorb all the slime and dry out quite a bit. That’s how I treat mine.

    Heavy Hitter and Jambalaya okra might produce better for you. You might want to give them a try. Jambalaya almost comes out of the ground producing. You will get pods when they are just over 1 foot tall. (I love okra, too. I keep some in the freezer all the time. I have okra in tomates on my pantry shelf right now. Also okra, corn and tomatoes.

    Yes, okra only grows in hot hot weather. Plant after temps are already hot.

    I used the stewed tomatoe recipe and then added okra, then pressure canned it with cajun spices. Pressure canned for 45 min. For pints, hope that was right . Glad you shared that recipe.

      45 mins for pints? Is the recipe much different from the one here? I thought 30 mins for pints 35 foe quarts. Can someone clear this up? Thanks

      @@tinae8433 yes my recipe is different, I used a stewed tomato recipe and added okra. I added time because of more peppers and onions, do not use my recipe. Use the one out of the book.

    I'm an okra and an okra-n-mater fanatic.... Love it... dad and I would can veggie soup and always add okra to it. I love it fried, boiled, baked, sautéed, roasted.. you name it! Really love sautéed frog legs over a bed of seasoned okra-n-maters with riced cauliflower YUM...... Love the video Ms Vickie! Those jars came out beautifully! Now, when we gonna eat? 😉😍😆

It needs to be soon, because my tomatoes are putting out a lot at the moment (but this is the first year I have decided to do home canning again, and it was after I planted in-determinant heirlooms, so I am getting the tomatoes

    I forgot to mention you can add a splash of red wine vinegar in your sauce. Gives the sauce a richer flavor. I also add parsley. It goes really well with okra.

    I just finished my soup while watching you - okra, tomato and split yellow peas with sweet potato leaves chopped into it. It was really good and you have sealed the last nail into the coffin - I will be getting a pressure canner ASAP. So many things I want to put up - especially okra. From my 11 plants, I have frozen 5 quart bags. Next year I'll plant 3 times as much as I ADORE okra in tomato soup. It never bothered me about the slime as I eat them raw and just after picking it - no slime then. But after frozen and then deep fried - no slime. I tried pickling them but slimy!!! Still good but ---. I also ate them chopped up with diced tomatoes and didn't ever notice slim. Your video explained it - the acid in tomatoes! So now I have GOT to get a pressure canner to put up my favorite flavor of the day. THANK YOU!

    Hi Vickie, I love your canning videos and I have learned so much from you. I hope you can help me. I have been growing vegetables for 25 years and have always frozen my harvest. This year because of watching your canning videos I decided to give it a try. I canned Spaghetti sauce in my canner and had a lot of liquid lost. I think I figured out what caused it but can’t find out how to fix it. Should I open jars and fill with liquid and re-can or open jars and freeze? Hopefully you can help me. Thanks again for your videos!

      Hi Carla, that sounds like evacuation from. your jars. I have found the best way to prevent that is, first make sure rings are finger tight. For me, that is when I am feeling resistance, but there is a tool that you can buy if you are having trouble. Two, and probably what is happening, is taking the jars out of the canner too soon. What I have been doing for a while depends on whether you are water bath canning or pressure canning. For water bath, turn the heat off and let sit for 5 minutes, then take the lid off and let sit 5 minutes, then remove the jars. If you are pressure canning, after the pressure is completely at zero, then remove the weight and let sit 5 minutes, then open the lid and let the lid rest cocked on the canner for 5 minutes. Then take the lid off and let it sit that way for 5 minutes, then remove the jars. This seems to help a lot.
      As far as what to do with the jars you have canned, when were they canned, and how much liquid was lost? I have had some jars in the past that evacuated, but it wasn’t too much, maybe an inch. I just stored them, but kept an eye on them to make sure they didn’t lose their seal (I always store without rings after cleaning the jars). I would also try to use them soon. You can open them, top them off and reprocess with new lids for the full time. You could also freeze them.

      Although a small amount of liquid can be lost, I believe canning with to high pressure and to long processing causes liquid lost. Research canning altitude chart for your area.

    I have a lot of (store bought)canned crushed and whole tomatoes that I'm making an arrabiatta sauce with. I love okra with this sauce. I normally roast the okra a little before mixing it with the sauce. I don't have nearly the volume you have. I'm wondering about the safety factor. I don't have an "approved" recipe to follow. It's basically your recipe, but in much lower volume and a lot of crushed red pepper. Do you think this is okay?

    Hi! I’ve watched many of your videos and have never commented. Today I was looking for other ways that can okra. I’ve come into sooo much okra this year even though I only planted 4 plants. Anyway, at the mark of 3:37 years noticed your gas stove turned on its self. I was wondering it I was just seeing things or if it was edited like that. It baffled me a little lol had to ask

    Hi Vickie, a friend of mine made salsa with okra. the taste was good, BUT the slime? OMG is was like snot. :( I couldn't get the third spoonful to my mouth....lol SO, how are you cooking that without getting all the slime?

      The tomato acid actually just causes it to thicken a little.

    I do not have a pressure cooker, can I process them in a water bath? and if so how long?

      No. Water bath canning doesn't get up to the same temp as pressure cooking. Its nowhere near close safety wise.
