I ❤ INDORE Also,one tip :when u soak poha ,add haldi in it..drain n add salt n sugar ,haldi gives even colour when u add in soaking.. Indori poha has a lemon yellow color,not the dark haldi yellow color Summers mein,they add graded keri n anar dana (most poha wala's dnt use onion)coz ussal balances it.. We r foodies to the core,we love our ussal tooo😋😋😋😋
@@blessed9491 soak matki/moong/green matar (dry)/kabuli chana either of these ,vatana tastes yumm too.. Boil them add some salt Strain,keep aside. Now heat oil(be generous else tarri won't float) Add hing,zeera,Rai,karri patta,tejpatta,badi ilayachi,phool dagad,Kali mirch,little piece of dalchini ,let it splutter Now add chopped onion,cook till pink,now add lots of ginger garlic paste,cook till raw aroma goes away.add redchili powder(kashmiri chili plus normal) tomato puree/very fine chopped tomato.. Cook till oil floats on top..can add little haldi.. Now add the legume.. Add water n salt ..bring to boil for few min..tada..the aromatic ussal is ready..can add little garam masala .
For poha:soak with haldi ,drain after sometime(depending on the quality ur using,some take just few min,some take 20 min soaking ) Drain. In oil,add hing,said ,Rai,a pinch zeera Green chilli chopped Add boiled potato big hand mashed chunks ..also Kari patta..add salt and a pinch haldi just to coat potatoes. Now add poha,salt n ground sugar.. Give a gentle mix.. Cover for few min . Tadaaaa..garnish with green coriander,anar,nimbu . Ratlami sev n pyaz

Poha is my soul food, very comforting and satisfying.But ever since I tasted Indori poha,I realised that it was certainly next level....the outstanding features being the use of extremely potent geeli hing (which you get only in the areas around Ratlam/Indore) and aromatic sabut dhania. Your recipe is wonderful but do try it by using the above ingredients and taste the difference.
Jeeravan is always best. We all here in Indore eat this jeeravan not only on poha but on many things even in maggie. Sprinkle a little on ghee roasted bread toast and u will love it infact ghee jeeravan and roti also tastes best.

Helo chef....I'm a fan of your cooking n of your style of telling things in an easy way.....my query is that when I prepare poha....my poha gets dry after a few hours ...so for tiffin it doesn't work... Though I wash them properly in running water....then too I get disappointed...

Kunalji once I ate instant poha in flight they gave me some roasted poha in air tight packet and boiled water mix it together and after 5minutes it will ready to eat and it is very tasty please make a vedio on it it's very helpful to busy people
Great presentation, i am from indore and in indore onion ko bilkul bhi kadhai main nahi dala jata, wo uper se plate main server kiye jate hain,kadhai main sirf thoda sa oil,rai and soked poha(salt,turmeric,suger and milk insted of water only 2 tbsp).

For Jeeravan masala
Dry red chillies - 5-6nos
Bayleaf - 3nos
Black cardamom - 2nos
Mace (javitri) - 2 whole blades
Cardamom - 5-6nos
Cinnamon (1” piece) - 3nos
Cloves - 5-6no
Black pepper - 8-10nos
Coriander seeds - 2tbsp
Cumin - 2tbsp
Fennel seeds (saunf) - 2 tbsp
Heeng - 1tsp
Nutmeg (Jaipal) - ½ no
Salt - 1 tsp
Black salt - 1 tsp
Amachur powder - 2 tbsp
Ginger powder - 2 tsp
For Getting Poha Ready
Poha (thick) - 2cups
Water - 1lt
Turmeric - ¾ tsp
Salt - ½ tsp
Sugar - 2tsp (optional)
For Tempering Poha
Oil - 4tbsp
Peanuts - ¼ cup
Heeng (asafoetida) - ½ tsp
Mustard seeds - 2tsp
Cumin - 2tsp
Saunf (fennel seeds) - 2tsp
Curry leaves - few
Green chillies chopped - 1no
Onion chopped - ½ cup
Turmeric - ½ tsp
Water - ½ cup
Salt - to taste
Sugar - 1tsp (optional)
Lemon - ½ no
Coriander chopped - a handful
For Garnishing Poha
Ratlami Sev - ½ cup
Pomegranate - handful
Roasted Peanuts - a handful
