I made this yesterday and OMG it's amazing. Not a huge fan of bacon so used some walnuts instead, but damn the texture and flavour of the quiche filling was so good!
that 2 halves pastry tart metal pan is awesome, i am a stickler for that presentation money shot even if it got cold, and will be on the look out for one at walmart prices. great paring with rice paper bacon so that guiche flavors remain delicate, bright, and lite during a multi plate vegan brunch.

Aqua faba is a great egg substitute. The flavour remotely reminds of eggs, but mainly it's a really good binding agent.

how did the "bakon" hold up? I've noticed that when I use my rice paper bakon in a sandwich OR in a recipe, it turns out chewy and gummy of sort.
