Foods of the Ummah - Lebanese Fatteh Recipe 🇱🇧

Lebanese Fatteh 🇱🇧
2 large flatbreads (I used leftover pita breads) ripped into bitesized pieces
1/4 cup Canola or vegetable oil for frying
2 tablespoons pine nuts
1 can chickpeas, don’t drain
2 garlic cloves, crushed or minced
1 teaspoon salt
2 cups yogurt
1 tablespoon lemon juice
2 tablespoons tahini
1/2 stick butter (4 tablespoons)
Heat the oil and add the bread in batches, fry until golden brown. Drain and set aside. Toast the pine nuts until lightly brown and fragrant. Set aside. Heat the chickpeas with their liquid. You may need to add more water to cover the chickpeas completely. Let them warm through while you make your yogurt sauce. Mix the garlic cloves and the salt, this helps to release more of the garlic flavor. Add the yogurt to this mixture, along with the lemon and tahini. Stir well. Add the chickpeas but do not add the water. If the yogurt is too thick, add a tablespoon or two of the chickpea water to thin it a bit.
Assemble the fatteh - put the bread on a platter, pour the yogurt over it then sprinkle with pine nuts. Once the fatteh is assembled, make your browned butter.
Heat the butter in a small pot on medium low heat until it foams and turns golden brown. Take it off the heat and pour it all over the fatteh immediately.
