Making Apple Cider Vinegar: The Fermentation Process

- In this episode, Kim discusses the various stages that the fermentation process goes through to make apple cider vinegar.
Straight from the orchard, fresh tree-ripened apples are harvested at the optimal time of the season to get apples with the highest sugar levels possible.
The apples are then juiced and begin the natural fermentation process. Initially the sugars in the juice are converted to alcohol through a yeast fermentation. From here, the secondary process occurs when the bacteria take over and convert the alcohol into acetic acid.
The product is constantly monitored to achieve an acetic level of around 4.8%. The last step is to mature the vinegar in oak barrels to allow the flavors to mature and develop.

Just the information I was looking for, and extremely well presented. Thank you! A two stage process: yeast, then bacteria. The rounding off aspects, and bringing out of the fruity flavors make perfect sense as how value-experience is created in the product. Therefore, I ask myself what goes on in the barrels during that change to the product? Is there a reaction, or is it an infusion? I know I could look that up :) Thank you for adding to all of our knowledge!

I have a 15 gallon oak barrel I have used for the past 5 years to make kombucha and do not need it any longer. There is a large hole cut out of the top because kombucha also has to breath when fermenting so I cover it with a cloth during the process, it also has a wooden spigot on it. Do you think it would be possible to reuse this barrel to make apple cider vinegar even though it cannot be sealed?
Why not just use a cork to seal it? Or maybe one of the special fermentation tops that allows gas to escape while keeping air out? (I'm forgetting the name of this tool but it's used frequently for pickling.)
@@DebiB62 The hole on tope was about 12" in diameter. But I have since sold this barrel to someone who makes tepache.

I think typically Apple cider is raw juiced apples(so non alcoholic) and after fermentation it turns into hard cider(alcoholic).
Apple cider vinegar is raw apple juice(apple cider) fermented into hard cider, then turned into apple cider vinegar with no alcohol, a two stage fermentation.
Yes you can make alcoholic cider with a lot of different fruit juices, by fermenting unpasteurized fruit juice with a brewing yeast, probably best to use apple as a base and use other fruits as flavors, apple juice on its own will get you around about a 5%alc hard cider

I've put some cutted apples in a jar with sugar and water by covered the opening of jar with cotton cloth For one month and then drain the liquid and let it put in another jar for one more month.

Ideally 3-6 Months - The longer the better.
Sir how would one know whether apple cider vinegar has turned bad or not i.e whether bacteria has further fermented and decomposed it into water and other constituents?
In theory it will last forever if it's kept in the correct conditions - light and temperature will degrade it. Keeping it in a cool, ventilated and dark space is best.
does apple cider vinegar have any amount of alcohol ?
