Chocolate Cake
1 3/4 cup all-purpose flour 215g
1 cup light brown sugar, firmly packed 200g
1 cup sugar 200g
3/4 cup natural cocoa powder 75g
1 ½ teaspoons instant coffee
1 1/2 teaspoons baking soda
3/4 teaspoon salt
1/2 cup canola or vegetable oil 120ml
1/2 cup unsalted butter melted (113g)
2 large eggs room temperature preferred
1 large egg yolk room temperature preferred
1 1/2 teaspoons vanilla extract
1 cup buttermilk¹
1/2 cup very hot or boiling water 120ml
Coconut Caramel Filling
4 large egg yolks
1 cup evaporated milk 236ml
8 Tablespoons unsalted butter cut into 8 pieces
1/2 cup granulated sugar 100g
1/2 cup light brown sugar firmly packed (100g)
¼ teaspoon salt
1 teaspoon vanilla extract
1 cups chopped pecans preferably toasted, 125g
2 cups sweetened shredded coconut 160g
Chocolate Frosting²
1 cup salted butter softened (226g)
3 1/2 cups powdered sugar 440g
½ cup natural cocoa powder 50g
1 teaspoon vanilla extract
2 Tablespoons evaporated milk³
Instructions
00:00 Introduction
Chocolate Cake
01:02 Preheat oven to 350F (175C) and prepare two 9" round cake pans by lightly greasing and flouring. I also recommend lining the bottom of each pan with a round of parchment paper. Set aside.
01:07 Combine flour, sugars, cocoa powder, instant coffee, baking soda, and salt in a large bowl (or in the bowl of a stand mixer) and use an electric mixer to stir until well-combined.
01:58 Add oil and melted butter and stir well (mixture will be very thick), then stir in eggs, egg yolk, and vanilla extract.
03:11 Gradually add buttermilk, stirring until completely combined.
03:26 Slowly add hot water (be careful not to splash yourself!), stirring until ingredients are well-combined. Pause occasionally to scrape down the sides and bottom of the bowl with a spatula to ensure all ingredients are thoroughly combined.
04:22 Evenly divide batter into prepared pans. Transfer to oven and bake on 350F (175C) for 25-30 minutes and a toothpick inserted in the center comes out clean or with a few moist crumbs. Allow cakes to cool for 15 minutes before inverting onto cooling rack to cool completely before filling and frosting.
Coconut Caramel Filling
05:37 Once your cake is in the oven, begin preparing your coconut/caramel German Chocolate Cake Filling. In a medium-sized saucepan, combine egg yolks and evaporated milk and whisk until eggs are lightly beaten.
06:23 Add butter, sugars, and salt and place saucepan over medium/low heat. Stir frequently until mixture is a light golden brown and thickened (about 10 minutes). Remove from heat and stir in vanilla extract, chopped pecans, and shredded coconut.
08:27 Allow to cool before spreading over cake.
Chocolate Frosting
09:35 In the bowl of a stand mixer OR in a large bowl using an electric mixer, beat butter until creamy. Gradually add powdered sugar and cocoa powder until completely combined. Stir in vanilla extract and milk.
Assembly:
11:17 Once your cake layers have cooled and your coconut/caramel filling is no longer warm to the touch, you can assemble your German Chocolate Cake!
11:31 Place one cake round on serving tray or cake platter. Use your chocolate frosting to spread or pipe a border around the edge of the cake. Fill the border with half of your coconut/caramel filling.
12:20 Top with second cake round. Frost top and sides of entire cake with remaining chocolate frosting.
13:02 Top off cake with remaining half of coconut/caramel frosting.
13:15 Slice, serve, and enjoy!
Notes
¹If you don’t have buttermilk on hand, please see my easy buttermilk substitute.²This makes enough to lightly but entirely cover the cake without much left over for decorations. Since this is such a rich cake, this amount of frosting will be sufficient for most people. However, if you intend to decorate, please increase the frosting recipe by 50%.³I recommend evaporated milk because you will likely have some over from your coconut filling if you purchased a 12 oz can. However, regular milk will work just as well!

As you know, I always make my comments on your website or e-mails, so I thought I'd leave a comment here, since I happened to be watching an inferior German chocolate cake on UA-cam. This cake is amazing! The texture is delicate, moist, and wonderful. The chocolate flavor is intense, much like a brownie. The coffee flavor comes through in the batter (in a very nice way), but in the finished cake, just intensifies the chocolate, as Sam tells us. The frosting is similar to Ghirardelli's recipe (on the wrapper for their German's Sweet Chocolate), but is improved by the addition of brown sugar and an additional egg yolk. I prefer their use of 1 1/2 cups each of coconut and pecans, so use your personal taste to decide how much of each to use. A tip I got from America's Test Kitchen is to wait until the frosting is cool to add the toasted pecans, because they will stay crunchy that way. Also, in my experience, the recipe for the chocolate frosting definitely makes enough to frost the sides and add the decorative rosettes on top, so you don't need to make 50% more. Also, from Shirley Corriher's wonderful and educational book Bakewise (She also wrote Cookwise), I learned that if you don't grease the sides of the cake pan, the cake comes out flat on top. When you grease the sides, the cake slips down as it bakes, so the center rises higher. If they are ungrease, the cake climbs up the sides and stays level with the center. That's why an angel food cake is never domed. Then, after the cake has cooled 10 minutes, you can loosen the sides with a knife.

Another big hit from this channel. I have been a cake decorator for over 35 yrs. @@SugarSpunRun Well, I made the cake, and it came out great, super moist, chocolatey and delicious. However, I went without the chocolate frosting, and made the coconut pecan mixture at 1.5% of the recipe to cover more. Rather than the 1.5% of the evaporated milk, which was 12 ounces, I think I should have kept it at 8 ounces. The mixture would not thicken, and once spread on the cake, it kept leaching out liquid around the base of the cake. After a half roll of paper towels to soak it all up, I think it is done. Now I understand why you make the chocolate frosting dam around this gooey mixture on both levels. Live and learn, right? Thanks again.

I just made this cake and it is AMAZING!!! I didn't have the teaspoon and a half of instant coffee, so instead of the half cup of very hot water, I used a half cup of freshly brewed coffee. It is such a simple recipe that yields a very impressive and delicious cake. Going to try your pound cake next. Thank you!

Sugar Spun Run it is soooo moist and delicious.i must admit i had to remake the cakes as they fell. Not sure if i just need a longer time in my oven or what. Second round i added 2 tsp baking powder just in case. So yummy! Very rich.
O no I’m sorry they fell! The extra baking powder could make them fall as well. If they fell the main culprits are over-mixing the batter, under-mixing the batter or most likely as you had said under baking. Did you try the toothpick test when you pulled them from the oven?
Sugar Spun Run not the first tim. They were so nice and rounded i didnt think i needed to, but second round i did. Had to bake extra 20 min. Might be my oven. But it was worth it. I froze first batch and will just make a different desert with that part. Love this recipe. Do you have a white cake recipe that is this good too?

I cannot wait to make this for a birthday this weekend! I am on fence about frosting... wonder if I should add it, if the people I'm baking for have not had german chocolate cake before. Any thoughts on whether or not to make frosting and add to final cake? Thanks and I'm sure this will be super decadent and way better than the traditional recipe!

You can certainly bake the batter into 3 or 4 cake pans. They will need to bake for less time. If you try to cut them in half it may get a little tricky but it could be done. :)

A common misconception is that German Chocolate Cake comes from Germany. In fact, the name comes from American baker, Samuel German, who developed a type of dark baking chocolate in 1852. The baking chocolate was then named Baker's German's Sweet Chocolate in honor of German.
What you have created here is a delicious chocolate cake with coconut caramel frosting, which is my favorite thing about German Chocolate Cake.

It was so funny. My dad will be 90 in May and he was asking for a German chocolate cake, which is his favorite. I’ve never made one, so being the millennial, we combed through UA-cam channels to see which one he thought looked the best. He was making some rather sexual sounds as you were making the cake.
