How to Make Caramel Cake

Ingredients
CAKE
3 cups all-purpose flour 375g (may substitute 3 ⅓ cups cake flour - 375g)
1 1/2 cups granulated sugar (300g)
1/2 cup light brown sugar firmly packed (100g)
1 Tablespoon baking powder
¾ teaspoon salt
3/4 cup unsalted butter, softened to room temperature cut into Tablespoon-sized pieces (170g)
1/4 cup canola oil may substitute vegetable oil or other neutral oil (60ml)
1 1/4 cup whole milk room temperature preferred (295ml)
3 large eggs room temperature preferred
1 Tablespoon vanilla extract
CARAMEL ICING
2 cups brown sugar² firmly packed (400g)
1 cup unsalted butter cut into pieces (226g)
1/4 teaspoon salt
1/3 cup whole milk (80ml)
1/3 cup heavy cream (80ml)
2 cups powdered sugar (250g)
1 teaspoon vanilla extract

Instructions
00:00 Introduction
CAKE
00:20 Preheat oven to 350F (175C) and lightly grease and flour the sides and bottoms of two 8” round baking pans¹. Set aside.
00:34 In the bowl of a stand mixer (or in a large bowl, using an electric mixer), stir together flour, sugars, baking powder, and salt until well-combined.
01:18 With mixer on low speed, add butter, one tablespoon at a time, until mixture resembles sandy coarse crumbs.
02:24 Stir in oil until well-combined.
02:43 In a separate bowl, whisk together milk, eggs, and vanilla extract.
03:37 With mixer on low-speed, gradually pour milk mixture into flour mixture. Once combined, pause to scrape down the sides and bottom of the bowl, then gradually increase speed to high and beat for 30 seconds.
04:34 Divide batter evenly into prepared pans and bake on 350F (175C) for 30-35 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
06:16 Allow cakes to cool for 15 minutes and then invert onto cooling rack to cool completely.
06:46 Prepare caramel icing:
CARAMEL ICING
06:55 Combine brown sugar, butter, salt, milk, and heavy cream in a medium-sized saucepan over medium-heat. Stir frequently until brown sugar is dissolved and mixture comes to a boil.
07:48 Once boiling, cook for 5 minutes, stirring constantly.
07:56 Remove from heat and pour into a large heat-proof bowl or the bowl of a stand mixer. Let sit for 5-10 minutes before proceeding.
08:27 Add powdered sugar and vanilla extract and stir with stand mixer or an electric mixer until combined. Increase speed to high and stir until caramel mixture is almost completely cooled and icing reaches a spreadable consistency.
10:02 Spread over cake. If icing is dripping off of cake (especially when icing the sides), let it cool a bit longer before proceeding.
12:23 Allow icing to solidify completely before slicing cake and serving. Enjoy!
Notes
¹May use 9” pans, but the cakes will need to bake for less time, around 28-30 minutes.
²I like to use half light brown and half dark brown sugar, but you may use all of either instead.

We used to call this type of frosting "penuche". Back in the 60's-70's, we would make a yellow cake and put "penuche" frosting on it. Penuche was a type of caramel fudge.
I had never made a cake using reverse creaming method. I always started with butter and sugar. I made this cake today and everyone in my family noticed the difference in the texture. It's amazing how same ingredients put together with a different method results in a new texture. Thanks for teaching this method. ❤

I made this for a friend's birthday and everyone ADORED it. ESPECIALLY the icing. The icing is a game changer for caramel lovers! I might make this for Christmas 🎄 The frosting looks like frosting or caramel fudge rather than a shiny caramel. I also like the idea of the reverse method. Makes life easier with baking and not messy at all.

So when I made your delicious pumpkin cheesecake which ALL of you guys have to try because it was absolutely DELICIOUS I decided to make this. I’ve always loved caramel and sweet things like this. And when they came out of the oven and let them cooled down I tried a little piece and I ended up eating half of the cake without even frosting it. When I frosted it was the best cake to ever exist. This us my 2nd time using this method, and yes my family loved it! The only difference is I didnt do 2 layer. I made in a bundt pan.

SugarSpun...made it...that cake texture is PERFECTION. Love this recipe and I added 2 tbsp of my homemade caramel sauce in the batter...which worked really well to give some caramel flavour to the sponge cake. 💓💓💓💓💓

I made this cake for Christmas and it was incredibly delicious. The only con is the reverse baking getting the butter to crumble in the flour. But, overall its 👍

Have been watching a ton of your videos and love them all! Could you tell me why you use whole milk in some cake recipes and buttermilk in others? Also, I noticed that in this recipe, you used the reverse creaming method, but not in your yellow cake recipe. Is there a reason for that? Can I use the ingredients in the yellow cake recipe and do the reverse creaming method for that one as well? I have baked for years, but never heard of the reverse creaming method. This is brilliant! Another good reason to crack eggs into a separate container is in case any of them are rotten, as I found when I was once making a large celebration cake, I took this precaution just in case and amazingly one egg WAS rotten! It saved the whole cake by not cracking the egg straight into the mixture :)

I have been making your caramel cake for the last couple years for birthdays and such (definitely a winner) but this year I decided on using the vanilla cake from your chantilly cake recipe just as a brave experiment and WOW! What a combo! I think you can frost almost anything with it! Has anyone used this caramel frosting for anything else?

That looks amazing! As for weighing out the batter for each pan, I actually do that. But then again, I also weigh out the dough for each individual cookie when making chocolate chip cookies. I know that's not normal, but I just prefer doing it that way XD

I thought I was the only who did that. I weigh my cookie dough to ensure each one is the same size and bakes evenly. I place a little square of parchment paper on the scale. Use a tablespoon to measure the first cookie and go off that weight for the rest. Yes that will work just fine. They will need to bake for about 17 minutes and will make about 24 cupcakes. 😊

You can use cake flour, or all purpose flour. In the description you can see the amounts for cake flour. There is no need to sift the all purpose flour. :)

Sometimes if the batter is beaten a little too much they will dome, or if you use cake flour this can happen. It's not really a big deal, you can just let them cool completely and level it off. :)

This will work as cupcakes. The temperature will remain the same, but the time would change. I would guess around 17ish minutes. :)

Hmmm I haven't tried. It's already a pretty sweet frosting because it is caramel, but you could try adding in more powdered sugar to thicken it up. :)

It’s sweet, but not overly sweet like you might expect. While the icing is definitely super rich, somehow it doesn’t seem overbearingly so when coupled with the cake. I hope you love it! ❤️
