INGREDIENTS:
- 3 Cups (270g) Rolled oats
- ½ Cup (60g) Almonds, chopped
- 1/3 Cup (40g) Dried cranberries, chopped
- 1/3 Cup (40g) Black raisins, chopped
- 1/3 Cup (40g) Pumpkin seeds
- ¼ Cup (35g) Roasted sesame seeds
- ¼ Cup (55g) Brown sugar
- ¼ Cup (85g) Honey
- 1/3 Cup (73g) Coconut oil/Unsalted butter
- 1 ½ Tsp Cinnamon powder
- ½ Tsp Salt
- 1 Tbsp vanilla extract
- Butter a 10” x 8” baking tray, line with parchment paper and set aside.
- Heat a pan, dry roast the rolled oats until crispy. Transfer into a large mixing bowl. Dry roast the chopped almonds as well, transfer to the bowl.
-Add rest of the ingredients of your choice like dried cranberries, raisins, pumpkin seeds, roasted sesame seeds and mix well. You can also add rice crispy, roasted peanuts, dried blue berries, desiccated/shredded coconut, sunflower seeds.
- In a small saucepan combine the brown sugar, honey, coconut oil/butter and simmer over low heat whisking constantly or until thickened and no longer watery (6-9 min)
- Take it off the heat add in the cinnamon powder, salt, vanilla essence and mix. Simmer for another 2-3 minutes. Now pour it over the oats mixture and combine everything together.
- Transfer the mixture into the baking tray and spread evenly, pressing down firmly. Bring it to room temperature, refrigerate for 30 to set.
-Remove from the tray, cut into bars or squares as required. Store them in air tight container up to 1 week.
