I’m from Amritsar, and this is not 100% Amritsari Kulcha. Kulcha dough is layered just like puff pastry dough with fat ( vanaspati or desi ghee) before putting the filling in, which gives the Kulcha its trademark flakiness. Chef talented as you surely can/should follow the original method.
May not be 100% but he’s given good effort. Even the pyaaz wali chutney I’ve never eaten with potato like he added but he did get that chutney consistency spot on. Baaki wadhiya to wadhiya chef oh Amritsar waala swaad bana hi nahi sakda
Accurate observation but man still 100 times better than what people are eating here in Canada. You go to a restaurant and they will put the name Amritsari Kulcha' in bold letters and eventually you'll end up paying 8$ for aloo parantha 😂

Recently visited the Golden Temple at Amritsar. On the way between Chandigarh and Amritsar there is a restaurant "Haveli." I had longed to eat the Amritsari kulcha & it was sumptuous. I shall try making it chef. Thank you for the recipe.

I also want to know why he added salt water to the tava and cooker. I can confirm that you can make it in the oven using broiler function. I use a pizza stone and make it very very hot. You can also place a cast iron tava in the oven and heat it for 30 minutes or so. This mimics tandoor and your kulcha naan tandoori roti will come out very crispy and flaky.

Tried with 60:40 whole wheat and Maida and the result was amazing. Kulchas came perfect.
