That's a great question! I don't really worry about it myself with the chickens eggs but I would alter the recipe if I used a huge egg like goose/turkey/duck because they have so much more volume.
I love lemon curd. I noticed that you said you usually use honey. How much and does it react differently than sugar? I’m trying to not use white sugar. Would love any advice. Thanks
I feel like it makes the curd less opaque. Other than that, to me it doesn't change the flavor at all. If anything it may add a slightly nutty flavor if that makes sense? It's not unpleasant at all and would probably be eliminated if you choose to use zest which I don't because peels get my sensory issues going.
