Sunshine in a jar. This amazing Lemon Curd is safe for canning and is shelf stable for 3-4 months. Please watch the video in its entirety and follow proper guidelines and precautions to ensure the safety of canning this product.
2½ cups superfine sugar
½ cup lemon zest (freshly zested), optional
1 cup bottled lemon juice
¾ cup unsalted butter, chilled, cut into approximately ¾" pieces
7 large egg yolks
4 large whole eggs
Fill hot strained curd into the clean, hot half-pint jars, leaving ½-inch headspace. Remove air bubbles and adjust headspace if needed. Wipe rims of jars with a dampened, clean paper towel; apply two-piece metal canning lids.
Process in the prepared boiling water or steam canner for 15 minutes, adjusting for altitude.
Adjust for altitude as follows:
1,001-3,000 ft ~ increase processing time by 5 minutes
3,001-6,000 ft ~ increase processing time by 10 minutes
6,001-8,000 ft ~ increase processing time by 15 minutes
8,001-10,000 ft ~ increase processing time by 20 minutes
Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

So you finally made the lemon curd, delicious isn't it. Not sure if you missed the step to let the lemon zest sit in the sugar for 30 minutes. I do some in 1/2 pints, just enough when you only need a little bit and notice no difference when canning. I have been making this for more than 15 years and found it in some off the wall canning book but couldn't believe it when I found it was actually a safe canning recipe. Great demo Carol. This is actually on my list to do this week.

Yes yes Yes!! I have to can our daily food here in Clearwater, FL during the summer. 115 heat index is too hot to turn on anything!! This will be great over ice cream during those times! We are lemon fanatics, thank you!!

Yes, after jarring but you will need about a 1” - 1 1/2” headspace for freezing
