Love this idea of canning lemon curd. Perfect to go with my homemade yogurt. I recall you referring to your corn broth as Sunshine in a jar as well. You should collect a Sunshine in a jar playlist 😁
A shout out to four jars canning. I am looking forward to trying your lids.🫙 I’m amazed how detailed you were on water-bathing your lemon curds sauce looks delicious. Thank you for sharing Janis.
Yes yes Yes!! I have to can our daily food here in Clearwater, FL during the summer. 115 heat index is too hot to turn on anything!! This will be great over ice cream during those times! We are lemon fanatics, thank you!!
Thank you for explaining the process. Given that it doesn't have a long shelf life I'm glad the recipe is for a small amount. I know that I could eat it all in a month but this deserves to be a special treat so I will ration it out.
So you finally made the lemon curd, delicious isn't it. Not sure if you missed the step to let the lemon zest sit in the sugar for 30 minutes. I do some in 1/2 pints, just enough when you only need a little bit and notice no difference when canning. I have been making this for more than 15 years and found it in some off the wall canning book but couldn't believe it when I found it was actually a safe canning recipe. Great demo Carol. This is actually on my list to do this week.
Loved this video Carol!! Thank you for explaining it fully to me. I am a new canner. If I wanted to freeze it, at what point would I put it in my freezer?? Right after I jar it up?? I'm not sure.
Hello Carol, I was wondering if you have ever combined apple & pears together for a butter? If so, would you just follow your recipe for apple butter? Thank you.
I’m not 100% sure about this for newbies. I wish you were part of Lisa SuttonsDaze Canuary I’m got to watch it many times as I’d like to can lemon curd
My 90 father loves anything lemon. A great recipe.

Loved this video Carol!! Thank you for explaining it fully to me. I am a new canner. If I wanted to freeze it, at what point would I put it in my freezer?? Right after I jar it up?? I'm not sure.
Yes, after jarring but you will need about a 1” - 1 1/2” headspace for freezing
Hello Carol,
I was wondering if you have ever combined apple & pears together for a butter? If so, would you just follow your recipe for apple butter?
Thank you.
I have not but yes you can use the same recipe
It looks gorgeous 😍 Would you suggest not cranking up the gas so it takes the 25 minutes to get in the go zone?
Correct! 😊
Would it safely double?
I love anything lemon. It would be worth it, to me, to double the recipe.
I don’t see why not…
What would you uses the lemon curd for does it go on a dessert like ice cream???????
Yes! Ice cream, cake, on toast or scones, etc.
In cheesecake or in yogurt, too!
Hello, is it still creamy after the canning process ?
Yes! It’s amazing 🤩
I’m not 100% sure about this for newbies. I wish you were part of Lisa SuttonsDaze Canuary I’m got to watch it many times as I’d like to can lemon curd
Does this set up after 24 hours or does it stay runny?
It sets but it’s on the loose side
Could you used an electric pressure canner instead?
No. This should be water bath or steam canned
Can you double the recipe, or would you have to make 2 separate batches?
You can double
Thanks Carol ❤
