I made lemon power ... I through the entire lemon into the juice extractor... (Jack L Lane).... the pith and fiber was separated.... I put the juice into the freeze dryer.... made perfect power.... lovely.... makes the best lemon aid
Hi there! I’m enjoying your vids! Thanks for comparing and testing! When I powder ingredients, if they need more time to dry, I sift them through a little strainer and I only dry the bits that don’t powder. Sometimes I just store them in a separate marked container. Like “celery powder” and “celery bits”. Great uses for both and no need to reddy them. They have stored over two years.
The one with more bitterness you can use to make bitterlemon, it's delicious!!! I've never dried lemons. When I use fresh lemon juice, I always cook the peels afterwards to make bitterlemon (when you ferment the drink for one day you get also the gas inside). The peels after cooking aren't bitter anymore so you can make candies and bath them in chocolate, a very delicious sweet. Maybe the cooked peels can be dried and powdered too (when you can resist not to eat them) They are delicious and they still have a lot of flavor.
The expressions when you tasted the lemon powder was priceless! I have some dehydrated as well but I haven't used it yet. I really need to start using it.
Love your lemon powder lesson. When I make a powder, I find that the friction from using blender seems to create moisture. I turn my oven on, warm it up to low. Shut off oven. Place powder on parchment paper on baking sheet. Leave in oven until completely cool. Works Great, sometimes it will crust over slightly, just gently tap to breakup. P owded no clumps or sticking. You two make a great team.

I love your videos! One suggestion for you: if you leave out one small piece when you're blending , you can place the piece next to the jar of powder for a visual reminder of what's in the jar. I hope that makes sense.
Hi Pam.Thank you for the video! I think that for the last batch (the one without the zests), if after zesting them you raw peel and divide them like we do with grapefruits, you'll end up with raw lemon quarters that you could freeze dry. No more bitterness outcome. I know, it's a little more work, but now they sell very good serrated paring knives and it makes that kind of job very easy. I don't know how that will impact the lemony flavor but who knows? Maybe you'll end up with a good raw lemonade base. All the best.
Miss Pam, I’m delighted that you covered this topic. I’ve been thinking about doing the same thing myself, but was wondering about the nuances. Thank you for being willing to do the experimentation and to share it with us, so we’ve already got a head start on our dehydration of lemons. That plastic bag idea is sheer genius. Big thank you to whoever sent that in! Serious game changer there, when all we wanna do is get something done and packaged up properly as quickly as possible, Without having to stop and deal with food getting flipped up into the lid. By way of giving back, and especially for people who want to save on the energy, When it comes to drying lemon peels, there is an easy trick that saves a lot of energy. When you peel the lemon, if you hold your peeler and just rotate the lemon with the other hand, you can get all the peel off in one continuous strip. Then, you can just hang it over a rack in the kitchen, and when you come back a few hours later, it’s dry. Or at least that’s how it works in my kitchen, and I live in a cold and humid location just slightly above sea level. Mind you, it leaves the peels more golden than sunshiny yellow, but it doesn’t seem to affect the flavor. I use them for tea, and they taste as nice when they’re dried that way as they are when they’re fresh for that use. Mind you, your powdering idea looks divine; as soon as I’ve got a new batch of anything to do with lemons done tomorrow, it’s all going in the blender! I’ve got half a bag of Costco lemons there, and they may have to go in the dehydrator tomorrow after seeing this today. Thank you so much! :-)
I zested my lemons and limes, then removed the white part of the zest prior to fruit, THEN sliced them, got no bitterness at all...tomorrow I powder more of them...the zests I mixed, as did I the fruit, it has a wonderful fresh taste...thanks for ur ideas, I have done other powders, and find that after powdering if I put the powders in the oven on parchment paper fir about 30 min the powders are perfectly dried, some were so I only did that for 10-20 minutes but want to be sure, and taste wasn't affected by doing it that way...great video Pam!

One particular video you did was whether we could use the insta pot for canning. The thoroughness for which you put forth was excellent. I was amazed that you were able to use a special thermometer (which you were able to use from one of the University’s), that actually fit in the pot with the jars and was able to record how hot it got. here in the uk im a little late in the magic of dehydrating but now im loving it, your videos have helped me loads. i love fresh lemon, lime and honey for my morning brew, one time i bought a batch of lemons and limes then dehydrated them and ground them into powder but when i added hot water the drink was very bitter however, now ive hit on a perfect way. i peel the lemons then squeeze them with the limes in the juicer, i discard the left over lemons then dehydrate the zest along with all the lime husks, when milled i add them together for a lovely powder, i can then enjoy the fresh juice and if i run out the powder will make a superb drink without the bitterness. thanks again, i love your channel. john

I love lemon-pepper seasoning on broiled chicken! Thanks, Pam, I'm going to try the dehydrator method with just the sliced fruit. I have an electric slicer, so I'm going to give that a go also.
I just made some veggie juice powder in my freeze dryer and it turned out great! I freeze dried carrots, celery, sweet peppers, cucumbers, spinach, beets, parsley, and purple cabbage. Once it was done I powdered it up then mixed it with some tomato powder I had on hand (2 parts veggie powder to 1 part tomato powder). I also added turmeric powder, pink salt, and ground pepper to the mix. I add 1/4 cup of the powder mix to 2 cups of water (with a little ice to keep it cold), then blend it well. It’s a bit strong tasting, but the tomato powder helps mellow it a little. I am going to try making my own tomato powder when I get garden fresh tomatoes, I’ll probably cook them down to a thick tomato sauce and then freeze dry the sauce.
I am SOOOO glad to have scrolled across your video. I freeze lemon zest and lemon juice in silicone ice cube trays to use as an immune system boost. I freeze pulverized ginger, as well. I am going to try powdering the lemons to free up my freezer. Thank you for your demonstration. I love it. The part when your face screwed up from the sour taste was priceless. It made my mouth water.

I do it both ways also. Peel only and after i power it i mix with cracked pepper for fish and chicken ..and slices to throw into water. Glad the rest of your powder got the moisture out. This was a great way to show all the versatility ..tyvm
I never watched or had a recipe. Just sliced them up and put them in the dehydrator. They took a while. Powdered them and had to put the powder back in the dehydrator for a while. I got a Yoassi tea infuser off Amazon. 3/4 teaspoons and pour your hot water makes a lovely refreshing drink. I know you can buy it cheap but hey you made it yourself nom nom

Wonderful. Lemonade or lemon water. A pinch or squeeze of lemon makes everything better. Lemon pie, lemon bars, lemon icing on cookies or pound cake. Yum. I can't wait. Thanks Pam and Jim.
i use a lot of lemons, at least one a day. So I dehydrate the entire halves, once they're juiced. I cut them up with scissors into small squares, and end up with some of every part of the lemon. I love it. I am convinced the "whole food" is the best, for us. And since I can always get organic, i feel the cost is worth it. A freeze dryer woud be fun, but it' beyond my means.

I have used both dehydrator and my freeze dryer for citrus, Lemons, orange's.. I like the way freezer dying leaves them BUT so much oil is removed in the process, you can actually see a layer of oil on the freeze dryer water bucket.. So, now i only dehydrate them...not as yellow, but you retain the oil, i also grind the seeds, they have tons of good benefits too..
LOVE your passion for experimenting. Lemon powder would be great to have on hand. Have you tried to make powdered ginger using fresh ginger root? Lemon and ginger play well together in many recipes.
@lyn pat - I hand grind my ginger and I put it in everything, but never thought to add lemon powder. I have a pound of dried lemon zest. Thank you for the great idea!!
In summer I use a dehydrator for most things and hang leafy greens in small bunches in the polytunnel. In winter I dry on trays or hang above the log burning stove. I've found that with citrus fruits it's better to peel then remove as much of the pith as possible. That way there's very little bitterness Really enjoy your videos. I'm learning a lot

I’ve made lemon peel , by using a zester, then dehydrated the zest, and placed in my nutribullet….that was several years ago……still have some……used moisture 🎉 absorb packet, to keep moisture out, no clumping that way. …..the freeze dried stuff sticking?…id stick that in dehydrator for awhile…..

Looking at a countertop dishwasher for my tiny apartment the one I'm looking most seriously at has a Fruit Washing cycle. New to me but sounds like the way to go for store bought fruits and vegetables. On top of all that I Adore Lemon ! Thank you for the tests . . . Hitting Costco again soon!

I made lemon powder with pepper. So basically I made I made lemon pepper. It’s been several months now and it’s very potent. Very useful and a lot of my recipes. Next time I’ll just leave the lemon plain. So I’ll have more uses for it. Thanks for the video.

I do Remove the peel form oranges and Put them in the dehydrator have tried lemon once when I needed some for a recipe. Cannot wait to see how you uses these. Now back to the store for lemons. I've used my coffee grinder to powder dried lemon or orange peels. Doesn't powder finely but no problem. Thank you for your wonderful teaching! And that perfection doesn't have to be a goal; there are experimental errors but so what? Good fun!

I made lemon powder and orange powder. I love orange powder layered in biscuit dough before cooking, like cinnamon sugar only better. I did slices. I also dried again after powdering and added a spoon of sugar.
This looks amazing! I have a question about your vacuum sealer...is it special for sealing mason jars? Or is it some sort of addition to a "normal" vacuum sealer (that will seal meat in bags, for example). I'd like to find one to purchase for my dry goods. This video was just what I needed!! I’ve started my own food stock pile and was wondering today, how I could use dehydrated lemons. Hoping to make this lemon powder as an emergency back up for lemonade. That’s my go to homemade drink when my kiddos get sick!
@@samme1024 Thanks! I like to cut big pieces and save time on cutting piece by piece by letting my vitamix do the grunt work or if its something I can cook in the over I still like to cut big pieces and then blend.

This powder is not the best for making lemonade. Remember, it has the peel and the pith in it. I will be making a lemon juice powder that should be much more suited to make lemonade--I will make a video.
Every time I dehydrate lemons or oranges, within a short time they turn brown. Oddly, citrus juice is used to keep other things from turning brown - lol .... Store-bought is brightly colored and makes me think they may be freeze dried.

As you peeled the lemons i remembered what they said about my Grandmother's peeling talent: when she permed potatoes, the peel was brown on BOTH sides! She raised 18 so she wasn't letting anything go to waste! Lol

I have dehydrated lemons... in order not to get them brown, it will have to be done at low temperature. What I have come to nowadays is to save the slices for tea or lemonade. For powder lemon, save the used ones, cut them into very thin strips (not slices) and dehydrate. It has worked for me. I take advantage when they are on sale, dehydrate and vacuum seal for future use. The powder I use for salads, chicken, cakes, etc. Thank you for going through all the options. You are amazing!

I really love this it was awesome. I don’t have a dehydrator yet I’m gonna have to use the oven but I’m sure it will work. And it’s probably going to make the best lemonade ever I can’t wait to make fresh lemonade with the powder instead of the packaged processed stuff just so full of chemicals.
I really enjoyed your video. I had watched the purposeful pantry on citrus and was curious about freeze drying. In her video she suggested a lower temp for citrus to stop the browning. Also taking the pith off.

Use a fan on high towards your freeze dry when on use to keep it from over heating, do this and your machine can last.👍

I zested my lemons and limes, then removed the white part of the zest prior to fruit, THEN sliced them, got no bitterness at all...tomorrow I powder more of them...the zests I mixed, as did I the fruit, it has a wonderful fresh taste...thanks for ur ideas, I have done other powders, and find that after powdering if I put the powders in the oven on parchment paper fir about 30 min the powders are perfectly dried, some were so I only did that for 10-20 minutes but want to be sure, and taste wasn't affected by doing it that way...great video Pam!

here in the uk im a little late in the magic of dehydrating but now im loving it, your videos have helped me loads.
i love fresh lemon, lime and honey for my morning brew, one time i bought a batch of lemons and limes then dehydrated them and ground them into powder but when i added hot water the drink was very bitter however, now ive hit on a perfect way. i peel the lemons then squeeze them with the limes in the juicer, i discard the left over lemons then dehydrate the zest along with all the lime husks, when milled i add them together for a lovely powder, i can then enjoy the fresh juice and if i run out the powder will make a superb drink without the bitterness.

We do it in out FDer
I just made some veggie juice powder in my freeze dryer and it turned out great! I freeze dried carrots, celery, sweet peppers, cucumbers, spinach, beets, parsley, and purple cabbage. Once it was done I powdered it up then mixed it with some tomato powder I had on hand (2 parts veggie powder to 1 part tomato powder). I also added turmeric powder, pink salt, and ground pepper to the mix. I add 1/4 cup of the powder mix to 2 cups of water (with a little ice to keep it cold), then blend it well. It’s a bit strong tasting, but the tomato powder helps mellow it a little. I am going to try making my own tomato powder when I get garden fresh tomatoes, I’ll probably cook them down to a thick tomato sauce and then freeze dry the sauce.

I am SOOOO glad to have scrolled across your video. I freeze lemon zest and lemon juice in silicone ice cube trays to use as an immune system boost. I freeze pulverized ginger, as well. I am going to try powdering the lemons to free up my freezer. Thank you for your demonstration. I love it. The part when your face screwed up from the sour taste was priceless. It made my mouth water.

I do it both ways also. Peel only and after i power it i mix with cracked pepper for fish and chicken ..and slices to throw into water. Glad the rest of your powder got the moisture out. This was a great way to show all the versatility ..tyvm

There are different benefits in peel than the fruit. Actually, more vitamin C in peel. Also can freeze and use later for stock or any other option.

I never watched or had a recipe. Just sliced them up and put them in the dehydrator. They took a while. Powdered them and had to put the powder back in the dehydrator for a while. I got a Yoassi tea infuser off Amazon. 3/4 teaspoons and pour your hot water makes a lovely refreshing drink. I know you can buy it cheap but hey you made it yourself nom nom

i use a lot of lemons, at least one a day. So I dehydrate the entire halves, once they're juiced. I cut them up with scissors into small squares, and end up with some of every part of the lemon. I love it. I am convinced the "whole food" is the best, for us. And since I can always get organic, i feel the cost is worth it. A freeze dryer woud be fun, but it' beyond my means.

I have used both dehydrator and my freeze dryer for citrus, Lemons, orange's.. I like the way freezer dying leaves them BUT so much oil is removed in the process, you can actually see a layer of oil on the freeze dryer water bucket.. So, now i only dehydrate them...not as yellow, but you retain the oil, i also grind the seeds, they have tons of good benefits too..

Have you tried to make powdered ginger using fresh ginger root? Lemon and ginger play well together in many recipes.

In summer I use a dehydrator for most things and hang leafy greens in small bunches in the polytunnel. In winter I dry on trays or hang above the log burning stove.
I've found that with citrus fruits it's better to peel then remove as much of the pith as possible. That way there's very little bitterness

I’ve made lemon peel , by using a zester, then dehydrated the zest, and placed in my nutribullet….that was several years ago……still have some……used moisture 🎉 absorb packet, to keep moisture out, no clumping that way. …..the freeze dried stuff sticking?…id stick that in dehydrator for awhile…..

I made lemon powder with pepper. So basically I made I made lemon pepper. It’s been several months now and it’s very potent. Very useful and a lot of my recipes. Next time I’ll just leave the lemon plain. So I’ll have more uses for it. Thanks for the video.

Oh Love what you did Ms. Pam. Great experiment! What ones or one would you use to make your own Lemon Pepper Seasoning? I do Remove the peel form oranges and Put them in the dehydrator have tried lemon once when I needed some for a recipe. Cannot wait to see how you uses these. Now back to the store for lemons. I've used my coffee grinder to powder dried lemon or orange peels. Doesn't powder finely but no problem. Thank you for your wonderful teaching! And that perfection doesn't have to be a goal; there are experimental errors but so what? Good fun!

I made lemon powder and orange powder. I love orange powder layered in biscuit dough before cooking, like cinnamon sugar only better. I did slices. I also dried again after powdering and added a spoon of sugar.
This looks amazing! I have a question about your vacuum sealer...is it special for sealing mason jars? Or is it some sort of addition to a "normal" vacuum sealer (that will seal meat in bags, for example). I'd like to find one to purchase for my dry goods. This video was just what I needed!! I’ve started my own food stock pile and was wondering today, how I could use dehydrated lemons.
Hoping to make this lemon powder as an emergency back up for lemonade. That’s my go to homemade drink when my kiddos get sick!
If you are going to powder foods. Would it be easier if you blended it first then poured it on the trays to dehydrate or freeze dry?
Some people do it that way but for me it is an extra step. Great question!

Sounds like it would make some great lemonade. Be interested in knowing what happened after final dehydration took place.
She put the result in the description under the video: "After we powdered it in the blender, we placed the powder back in the dehydrator to drive off the last of the moisture. The result was perfect lemon powder that has many uses and is shelf stable for months."
This powder is not the best for making lemonade. Remember, it has the peel and the pith in it. I will be making a lemon juice powder that should be much more suited to make lemonade--I will make a video.

Every time I dehydrate lemons or oranges, within a short time they turn brown. Oddly, citrus juice is used to keep other things from turning brown - lol .... Store-bought is brightly colored and makes me think they may be freeze dried.
Ha! Funny! My lemon powder is brown too. I end up using it for the garbage disposal.
If yours turn brown in the jar you might try using an O2 absorber Pack in the storage jar.
From what I've heard on another channel that is mostly dehydrating, citrus has to be dehydrated at a lower temperature and for a longer time.

As you peeled the lemons i remembered what they said about my Grandmother's peeling talent: when she permed potatoes, the peel was brown on BOTH sides!
She raised 18 so she wasn't letting anything go to waste! Lol

I have dehydrated lemons... in order not to get them brown, it will have to be done at low temperature.
What I have come to nowadays is to save the slices for tea or lemonade. For powder lemon, save the used ones, cut them into very thin strips (not slices) and dehydrate.
It has worked for me. I take advantage when they are on sale, dehydrate and vacuum seal for future use.
The powder I use for salads, chicken, cakes, etc.

I really love this it was awesome. I don’t have a dehydrator yet I’m gonna have to use the oven but I’m sure it will work. And it’s probably going to make the best lemonade ever I can’t wait to make fresh lemonade with the powder instead of the packaged processed stuff just so full of chemicals.

I really enjoyed your video. I had watched the purposeful pantry on citrus and was curious about freeze drying. In her video she suggested a lower temp for citrus to stop the browning. Also taking the pith off.
