Hi Pam. I have never canned custard. When breaking down the ingredients and pH levels of the ingredients, I feel that this may not be a safe food to WB can. You would need to process it for such a long period that I feel that the end result, the texture, wouldn't be palatable. 😊
You're confusing me. 🤔 Where does the blue come from? Seriously though, if you wanted you could use food dye to make it green but I try to stay away from things like that. That's why I mentioned it will be about the same color as the lemon curd. 😊
Hello! Just found your site about a week ago. You have answered a lot of questions I had about canning dairy products. Thank you! Now, another question; my husband and I are on Keto, with great results. We’d love to have lemon curd on hand, curious as to whether you’ve ever tried canning with allulose. It’s great to bake with, but I’ve had trouble finding anyone who cans with it. Do you or do you know anyone? Looking forward to more of your great videos. Thanks again !
Hi Green Eyes. Kudos on the Keto! I have never used allulose. If you're able to use it in equal amounts or close to as sugar, I'm (guessing) it should work in canning. Since you aren't finding any answers online, I suggest doing a very small batch of something (1 or 2 small jars) to test it to see if it would be suitable as a sugar replacement. I'm sorry I can't give you any definite answer! 😊
Where is the recipe? I wanted to make a double batch as well, and I did write it down but I was confused about the whole eggs. Do you need 4 or 8? I hope I DONT screw this up because I have already started down the rabbit hole! Lol!
I don't know if I heard correctly. Are you storing your steamed canned lemon curd and lemon juice in the refrigerator or your pantry? Also, what you you estimate the shelf life to be if you stored it in your pantry?
Hi Victorian Gardens Cattery. I'm storing them in the pantry. The recipe I followed said 6 months for shelf life but I had some a little over a year old and it was good. I've got home canned lemon juice that's 2 years old in the pantry, and although the "solids" have separated and settled to the bottom, like any 100% commercial lemon juice would do, I just shake the jar real well before I'm going to use it. I hope this helps. 😊
Hi Sharroon. Your correct, whereas the acidity is slightly less with Meyer lemons vs standard lemons. But the pH level is almost the same, making them a very acceptable choice. 😊
Hi Paula. That depends on how fast you eat it. 🤭 No, really I think I've had an open jar in the refrigerator about 5 or 6 days before I finished the jar. Also, the recipe I had followed said shelf life 6 months. It lied. I had some in the pantry that was over 18 months old and it was still good. 😊
@tanyadavis9192 Hi Tanya. I've never done it so I'm not sure if the curd would separate or not once it thaws. Sorry I'm not able to say yes or no. 🤷♀️
Hi Christina. Lemon curd only needs to be WB canned. When I have many jars to can, I'll use my PC as a steam canner so I don't need to use as much water when I'm double or triple stacking layers. I share how I do this process when canning OJ. ua-cam.com/video/CUcsSZ0OGQE/v-deo.htmlsi=VPP_N1KTAUrt0SdZ
@jeanninemcwhorter919 Hi Jeannine. My suggestion is you would be better off using 100% pure bottled lemon juice than a concentrate. All concentrates have added ingredients for the processing. If that's all you have on hand, it would probably work. I tried canning OJ from a juice concentrate that was gifted to me and it turned out undesirable. I hope this helps. 😊

Hi Pam. I have never canned custard. When breaking down the ingredients and pH levels of the ingredients, I feel that this may not be a safe food to WB can. You would need to process it for such a long period that I feel that the end result, the texture, wouldn't be palatable. 😊
Wonder if you can do this with key lime? Hand key lime pies also sounds delicious
Hi Finca Rosa. Yes, you can! Just remember it's going to come out about the same color. 😊
Thanks! I will probably try it one year. I plan to plant a key lime 😋
@@fincarosa6767 key lime is my favorite!
Yellow and blue make green!! 🤣🫢 I'd be tempted to try it.😁
You're confusing me. 🤔 Where does the blue come from? Seriously though, if you wanted you could use food dye to make it green but I try to stay away from things like that. That's why I mentioned it will be about the same color as the lemon curd. 😊
These are the bowl sets I keep asking about. Do you remember where you got them?
@outthebackdoor
@@jeanninemcwhorter919 Jeannine, if you're referring to the yellow colored nesting bowls, I got those at Walmart years ago.
@@OuttheBackDoor Thank you. Knew it was a long shot.
Where is the recipe? I wanted to make a double batch as well, and I did write it down but I was confused about the whole eggs. Do you need 4 or 8? I hope I DONT screw this up because I have already started down the rabbit hole! Lol!
When doubling the recipe, do you need 4 or 8 whole eggs?
Minha querida vou provar fazer. Quando vai fazer o bolo Angel. Para nos ? ❤❤❤❤

@@OuttheBackDoor ebaaaa já vou correr e fazer ❤️❤️❤️
I think the lemon juice is probably acidic enough, but did the recipe call for meyer lemons? I don't think they are as acidic as lemons.
Hi Sharroon. Your correct, whereas the acidity is slightly less with Meyer lemons vs standard lemons. But the pH level is almost the same, making them a very acceptable choice. 😊
I didn’t catch whether you can put the finished product on your pantry shelf or if it must be placed into the fridge?????
Hi Andy. Once it's been water bath canned it may be kept in the pantry. Refrigeration is required after opening the jar. 😊
@@OuttheBackDoor Thank you so much for your quick reply 😊. Will do!
You're very welcome!
I even can butter. LOL
🤣 Nice, Richard!
How many lemons did you use for the juice please and thank you for sharing. Be the next thing for my shelves
Hi Sandra. If I recall I went through 3 bags of lemons. Sorry I can't give you a more definite amount. 😊
No your fine that's perfect
Have you tried canning Wassail?
Hi Barbosa003. No, I haven't. 😊
add it to homemade ice cream
Hi JRC Homestead. That sounds delicious! 😊
How long will the jars last and how long will the jars last once opened? Thx
Thanks for getting back to me. I could not eat the curd that quickly. I would have to jar it up in the 1/4 jar. Have a great day
Can this be used with yogurt as a fruit base?
Hi Anna. This would be delicious with yogurt, especially home made! 😊
Can you freeze lemon curd?
@tanyadavis9192 Hi Tanya. I've never done it so I'm not sure if the curd would separate or not once it thaws. Sorry I'm not able to say yes or no. 🤷♀️
Can you water bath lemon curd or do you have to have a pressure canner?
Hi Christina. Lemon curd only needs to be WB canned. When I have many jars to can, I'll use my PC as a steam canner so I don't need to use as much water when I'm double or triple stacking layers. I share how I do this process when canning OJ.

Can you use lemon concentrate?
@jeanninemcwhorter919 Hi Jeannine. My suggestion is you would be better off using 100% pure bottled lemon juice than a concentrate. All concentrates have added ingredients for the processing. If that's all you have on hand, it would probably work. I tried canning OJ from a juice concentrate that was gifted to me and it turned out undesirable. I hope this helps. 😊
@@OuttheBackDoor thank you so much for taking the time to answer my questions. I just love that about you, among many other things ❤️
@jeanninemcwhorter919 thank you 😊
Do you have a printable recipe?
Hi MR. No, I'm sorry I don't. I've tried attaching a pdf of the recipe into the description box and it wouldn't allow me to. 🤷♀️
bottled lemon juice ONLY for canning of any kind. Anything else doesn't have the needed acidic level.
Unless you have a high quality pH meter and your able to check the level. But yes, most people should stick with store bought. 💖
Peel the remaining lemons to make Limoncello Waste not want not. 😋
Hi BostonBorn. A good suggestion for others, but I don't drink. 😊
