I think I liked it better when this train wreck was more subtly cut and edited and slowed down so every nuance of shitty could be digested at a pace that wasn't break neck.
Some episodes of KN have been embellished and edited to make things appear different on TV than in real life, and some actors have been placed on staff by the show, and I think Joe was given lines and provoked by the crew a bit, but I'd say that 90% of this is the real deal. He's absolutely nuts. The production picks restaurants based on staff and ownership, and not the restaurant as a whole. The more insane and bizarre an owner and/or staff, the better the chances are that a business will be picked.
