I work in a restaurant and I thought our restaurant was bad until I watched these videos. Our restaurant got a B after inspection so that’s pretty ok. We just have little things out of place but nowhere near as bad as these like wow. So glad they have these honestly. It helps them know what to work on. However even with inspection, I feel like most restaurants, especially small and family owned, will eventually revert back to old ways or won’t follow the rules for a healthy and clean environment. But that’s why there’s inspections in the first place

Ive worked in a couple of kitchens. I can assure you, its not hard at all to keep it up to scratch, raw meats bottom of the fridge in sealed containers. Have someone washing pots through the shift, bin the flannels and and pan scrubs once they start to deteriorate and use new ones. Clean surfaces throughout the shift, doesnt have to be a major effort, just a quick wipe down and disinfectant. Have a big clean up at the end of every shift, i.e all the floors and surfaces, an hour tops. Always label expiry dates on new foods. Thats all you need to do to keep hygiene up to scratch. Its not rocket science.

I believe most restaurants don’t maintain the standards that food inspectors are looking for. Restaurants should be required to take every customer on a tour of their kitchen and cooler prior to ordering. I think that would go a long way in helping restaurants “clean up their act”.
