Fiji Style Custard Pie

  • Fiji Style Custard Pie
    Ingredients:
    PIE BASE
    • 2 Cups Self-Raising Flour (Or You can use 2 Cups Of Plain Flour mixed with 2 Tsp Baking Powder)
    • 1/2 Cup White Sugar
    • 125 g Soft Butter
    • 2 Eggs
    CUSTARD
    • 4 Cups Milk
    • 1/2 Cup Raw Sugar (Or White Sugar)
    • 1/4 Tsp Yellow Food Colour
    • 1/2 Cup Vanilla Flavoured Custard Powder (If Your Custard Powder is Plain, Just add 1 Tsp Of Vanilla Essence)
    UTENSILS:
    • A Baking Tray
    • 2 Tbsp Melted Butter
    • A Pastry Brush
    • A Fork
    Method:
    1. Preheat your oven at 160 degrees if it is a fan forced oven and 180 degrees if it is a conventional oven.
    2. Grease the baking tray with melted butter using a pastry brush and put it aside.
    3. Take butter in a large dish, add sugar and beat it using an electric beater.
    4. Add eggs and beat it well.
    5. Add flour and mix it using a spatula until it starts to come together.
    6. Use you hands and knead into a soft dough.
    7. Place the dough on the greased baking tray. Put a plastic wrap on top of the dough and use your fingers to press it down evenly on the base of the baking tray.
    8. Prick the base using a fork and bake it for 20 minutes or until you get a golden brown colour.
    9. Take it out of the oven and let it cool down slightly while we get the custard ready.
    10. Take a saucepan, add custard powder and 1 cup of milk. Use a whisk and mix it well to combine. Add the remaining milk, sugar and 1/4 teaspoon of yellow food colour and mix it well.
    11. Put the saucepan on medium heat and bring it to a boil, stirring it continuously.
    12. When it starts to boil, lower the heat and let it simmer for 2 minute.
    13. Turn the heat off, spread it evenly on the base using a spatula and let it cool down for 1 hour.
    14. After 1 hour , cut it into any size you like and it is ready to serve.
    15. Fiji style custard pie is ready and you can serve it to family and friends.
    16. Left over custard pie can be kept in a sealed container in the fridge for up to 5 days.
    17. Enjoy.

      Dear Matthew, I did not forget the condense milk, coconut or crushed peanuts on the top. I always make my custard pie this way. You have the option of adding them if you like. Regards Anita.
